This recipe is the perfect appetizer for a group gathering. Creamy black beans, gooey cheese, and toppings galore.

Mexican Style Rice

This rice is a perfect partner to any Mexican Meal while also being a standout dish on its own. Lots of flavour from the onion, garlic, and cumin and packed with fresh vegetables. ENJOY :)

The quality of the document below is kind of cruddy, I can't seem to get it aligned properly despite the actual recipe looking fine.

All I can say is WOWZERS! These potatoes were amazing, crispy on the edges and so cheesy and flavourful, I couldn't tell you how authentically German this recipe was but after tasting them, I've decided it's besides the point !

Caprese Salad

There are so many variations to Caprese Salad out there so the fun part is trying it differently every time you enjoy it ! 4 Simple ingredients and you've got a delicious, flavourful side dish / app... Tomatoes, Mozz, Fresh Basil, and Balsamic Vinegar reduction.

What I did was used the Red and Yellow Cocktail Tomatoes which looked gorgeous on the plate and Bocconcini cheeses which I also sliced for the salad.
You could also dice everything and serve it in small bowls however the layered version certainly looks better!

Literally lay your sliced tomatoes, layer with slice of Bocconcini, and fresh basil and repeat across the plate. I used the Pioneer Womans method to making the balsamic reduction (find it here http://thepioneerwoman.com/cooking/2011/06/caprese-salad/

I drizzled mine with olive oil and sprinkled sea salt and cracked black pepper over the entire dish.

It turned out amazing !

These arancini were PHENOMENAL! Every single item stood out in flavour, they were texturally pleasing and had just the right amount of cheese, peas, and fried deliciousness. The accompanying Marinara sauce is the perfect compliment.
