This recipe turned out so great ! My meat loving father had seconds !

NOTE: I like texture so I choose not to cook the carrots prior to baking them. If you prefer them to be tender you should cook them a little before using them in the Shepherd's Pie.

Tri-Colour Tomato Basil Penne

Cocktail tomatoes and fresh herbs make this a colourful and fresh looking dish. Loads of flavour from the basil and fresh tomatoes and perfectly cooked pasta make for a simple yet delicious Vegetarian din!

Panzanella Salad

Panazanella salad is wonderful for a variety of reasons, particularly because it makes use of otherwise useless bread.
For a better visual you can swap out the red tomatoes for yellow but I love the texture of grape tomatoes and the juicy, crunch they provide.

Give it a try and you'll see why this tangy, fresh salad is a winner!

Jazz up that Mash!

Ahhh, mashed potatoes. Who doesn't love a big heaping spoonful smothered in rich, decadent gravy? Potatoes as a matter of fact, are my favourite food.

I love them FRIED, MASHED, BAKED, ROASTED, BOILED, STEAMED and the list goes on. I have yet to meet a potato that  I didn't get along with.

These ideas for jazzing up your mash come from pulling myself away from the gravy boat. Potatoes are delicious and I wanted to try making them a few different ways where they were so flavourful that I skipped the gravy.


1 Bag Mini Red Potatoes
Bunch Parsley
Olive Oil
Heavy Cream
Milk
Sea Salt / Pepper

Boil your potatoes until they are tender. I leave the skins on because I love the texture and flavour. You may remove them however.
Bring out your masher and smash them a few times. Pour in some olive oil, smash a tiny bit more and add some milk (for creaminess) and heavy cream (for richness)
Whip in with a fork the chopped parsley, sea salt and cracked pepper (to taste)
ENJOY!

This is a simple and delicious way to jazz up your mashed potatoes and skip the gravy. Don't stop there! There are lots of different herb / spice variations you can try that will kick up your taters a notch.

What about fresh rosemary, olive oil, salt / pepper.

What about minced garlic, olive oil, fresh parsley, cracked pepper.

What about freshly grated parmesan, fresh oregano, cracked pepper.

Now get in the kitchen and play with your taters ;)

Leafless Greek Salad with Homemade Dressing

Greek salad is quite possibly my favourite salad. The saltiness of the Feta contrasts the freshness of the tomatoes and cucumbers and blends into the perfect bite every time.

This take on Greek Salad removes the lettuce and keeps the veggies chunky and the salad fresh and hearty.

Try and Enjoy !

**When chopping the vegetables, use the grape tomatoes as a guide on how large to chop your peppers, cucs, and onions. You want the chunks to all be about the same size.
