Bean, Spinach and Potato Soup & Herby Dough "Buns"

I was inspired by a recipe I saw the other day and was really in the mood for soup. This recipe combines my new found love of making dough and a hearty and flavourful combination of vegetables in the soup to form the perfect dish.

The dough bites sliced in half resembled english muffins and soaked the butter up like a sponge. They were great for dipping in the soup just by themselves as well!

Spinach Pesto Pasta Bake

I remember having tomato sauce blended with pesto for the first time in a restaurant and it was fantastic. Salty, nutty notes from the pesto really balanced out the acidity of the tomatoes.

I recently made a spinach pesto and happened to have quite a bit more so I decided to make the sauce I remember loving some time ago.

Veggie Stuffed Calzone

This is a more traditional vegetarian Calzone. Sauce, Cheese, and Veggies, what could be wrong with that?

The sauce is simple and really works for dipping as well.

This recipe is going to save me from ordering Panzerotti's ever again! Worth every minute in effort they took to prepare. Garlicky spinach pesto, tomatoes, onion, cheese, and parsley. Simple and delicious.

Red Rice Burritos with Avocado Cream and fresh Pico De Gallo

As I looked through various Mexican rice recipes this one stuck out to me for the fact that the ingredients were blended. As I thought of what I'd do a little differently I decided it was a Mexican Food night! Burritos are a great way to incorporate rice with these flavours and the Avocado Cream complements them PERFECTLY! Rich and zesty, the warm / cool balance is quite wonderful!

I garnished with a delicious Pico. Pico De Gallo is the perfect burst of freshness to cut the richness of the cheesy, beany burrito.

Stuffed Zucchini

This was quite possibly the best zucchini dish I've ever created! So flavourful and really elegant looking for being pretty simple.

The original recipe used mint and lamb which I obviously removed and replaced with parsley and white beans. I mixed Panko bread crumbs with the Parmesan topping which I think gave it a great, salty crunch!

Cheesy Tomato and Spinach Tortiglioni

I absolutely love pasta especially when using fresh tomatoes in the sauce. This particular pasta is ridged which when tossed with the sauce allows the sauce to seep into those ridges and really cling to the pasta. Very hearty and loads of flavour!

Mashed Potato Pancakes

Crispy on the outside, creamy on the inside. These pancakes are absolutely delicious with my chive and garlic butter.

TIPS:
1. Make sure your pan is hot enough otherwise when the mashed pancakes hit the pan they will soak up oil and really not crisp up well.

2. Day old mashed is best! Prepare the night before so the potatoes lose some of their moisture by morning. If you decided to make them same day they must be refrigerated for at least 3 hours before using.
