After Christmas, my sister reached out and expressed wanting to have a cooking day with me. It's something we both love although we don't get to do it very often. Ever since I started my new job in September, I've been working weekends which is the only time we'd be able to get together. Tt stinks, but I ended up with a Sunday off a week ago and we had the opportunity to get in the kitchen. We decided on my Pastina recipe and she made a delicious Bruschetta recipe she'd found. Let's dive in.
Pastina RecipeTara prepared the balsamic bruschetta topping and had it in the fridge setting up while we prepared the soup. To start, I added a few more cloves of garlic than the original recipe because who doesn't love garlic? I also cranked up the heat because we both appreciate some spice. After the veggies were cooked down, some wine and then broth. Once the soup comes to a boil, we covered and let it simmer for about 30. Once the veggies were tender, we blended them up, returned them to the pot, and added our Acini Di Pepe. Then, it's just a matter of cooking until the noodles were plump and the soup was nice and thick. I also decided to finish it this time with a few tablespoons of butter to give it some extra lusciousness. In the meantime, Tara assembled the bruschetta. She baked off the baguette until crisp and then topped with the balsamic bruschetta topping, some dreamy burrata, and a drizzle of sweet balsamic glaze. The bruschetta was actually so refreshing and delicious. That balsamic flavour was actually such a good addition that I might try it out again for myself. Nice and garlicky, crispy bread, dreamy burrata...all the good things. We rounded things out with some fluffy cheese and onion sourdough for dunking in the soup and that was that. Also, I got to spend time with my favourite boogie boy. He's such a big suck, I love him. That's that. A day spent cooking, eating, and spending time with family can't be beat. I can't wait to get back in the kitchen with my sis again soon <3
