White Bean & Spinach Grilled Toast




Prep Time: 15 Min

Cook Time: 15 - 20 Min

Serves 4

  1. Begin heating the butter, EVOO, pepper flakes, and 4 cloves of sliced garlic in a medium sized frying pan set to medium. Once that starts to sizzle, stir for one minute before adding the onion and reducing the heat slightly. Season with salt & pepper, stir, and cook the onions until translucent, about 5 minutes.
 
  1. Pour in the beans along with another pinch of salt and pep. Let those cook a minute or so before stirring and continuing to cook for 3 minutes. Use a potato masher to mash half of the beans right in the pan. Pour in the vegetable stock, add the spinach along with a generous pinch of salt and pep, and cover. Cook for 3 or so minutes until spinach has wilted.
 
                     Grocery List
  • 1 Tbsp. EVOO
  • 2 Tbsp. Unsalted Butter
  • 4 Slices of Fresh Crusty Loaf Bread
  • 4 cloves Garlic, crushed and sliced
  • 2 cloves Garlic, gently crushed
  • ½ Yellow Onion, diced
  • 2 sprigs Fresh Thyme
  • 4 C Baby Spinach, packed
  • 540ml can White Beans, drained & rinsed
  • ¼ C Low Sodium Vegetable Stock
  • ¼ Lemon +
  • ¼ Tsp. Red Pepper Flakes
  • Sea Salt & Cracked Pepper
  • 4 Large Free-Range Eggs
  • Grana Padano Cheese

  1. While the spinach wilts, preheat a grill pan set to medium. Once heated, brush each slice of bread with EVOO and grill each side for roughly 2 minutes until crusty and grill lines are prominent. Brush the cooked side with the extra cloves of garlic.
 
  1. Pluck out the thyme sprig and squeeze in the lemon juice. (More to taste if desired.) Taste and adjust salt if desired. Transfer to a bowl with a lid and return the pan to the heat. Crack in each of the eggs and season them with salt, pepper, and pepper flakes. Cook until whites have set and yolk is at desired doneness.
 
  1. For service, place your grilled toast on your serving dish. Spoon over ¼ of the bean & spinach mixture, top with one of the fried eggs, and finish with a sprinkle of pepper flakes and desired amount of freshly grated grana Padano. ENJOY!
