Chik'n Caesar Salad For 1

I usually write & test my recipes to feed four people. When I created my blog, my intention was to create meals for families who were looking to add more meatless meals to their rotation. With that being said, I do like to cook for myself and this Chik'n Caesar Salad is where it's at!

I fried up some Gardein plant-based chik'n strips and grilled up a piece of sourdough that I rubbed down with garlic, and chopped up for croutons. I dressed the romaine with anchovy free Caesar dressing and heaps of grana padano. Once I plated that up, I topped it off with some red onions, my crispy, garlicky croutons, golden chik'n strips, more grana padano, parsley, and a lemon wedge for that pop of citrus. Egg Salad & Arugula Sammies

A good egg salad sandwich is a whole vibe y'all. Everything for me has to be just right. The bread has to be soft, yet firm to hold the salad in. The salad has to be chilled for long enough that it firms up and holds its structure on the sandwich. I also need some gorgeous greens to round things out.

My egg salad is super simple; eggs, mayo, Dijon, vinegar, crispy veg, and herbs. I let it refrigerate for a minimum of 30 minutes to firm up. I used the most delicious Everything Sourdough bread which was so soft, but also firm and hearty. Loads of peppery arugula and some crispy chips on the side. Brothy Tater Soup

I'm the first one to admit, I absolutely LOVE a creamy tater soup. With that being said, sometimes I get a hankering for good broth. I like my broth spicy, seasoned, and often times, I want to see a little greasy sheen on the top of the soup which always reads to me as lush.

This tater soup is super simple. An assortment of veg, chunky, tender taters, the most flavourful broth, good wine, and heaps of grana padano, parsley, and green onions to finish it off. I love my taters super chunky when I'm making a potato soup, but you could always cut them smaller. Secondly, I used an entire teaspoon of pepper flakes because your boy loves his heat, but you could reduce to your own tastes.

Iceland Cancels Fin Whale Hunt

Due to a lack of demand, Iceland's annual fin whale hunt was cancelled, sparing innocent whales a merciless death. This news comes after decades of advocacy and education leading to a decreased demand for whale meat. Great news for fin whales y'all! Head to the ANIMAL NEWS page.

Creamy Sausage & Cherry Tomato Bucatini

Thanks to Beyond Meat Hot Italian sausages, dinner is as simple as can be. These sausages have SO MUCH flavour you guys and can easily be the star of the show. This recipe was a result of scouring my fridge for ideas and realizing I had sausages out, a box of bucatini, and a container of cherry tomatoes with no intended purpose lol.

So simple. I fried up some onions and garlic before crumbling in the sausages. Once cooked down, some good wine followed by some rich whipping cream & basil. While that simmered, I cooked my pasta and then finished the bucatini directly in the creamy sauce to thicken it up. Finished with grana padano & pasta water until glossy and gorgeous.

Hearty Breakfast Burritos

When it comes to a hearty breakfast, breakfast burritos always come to mind. So many delicious things stuffed inside a gorgeously golden tortilla. So delish!

I roasted up some taters dressed in herbs and garlic seasoning until they were golden and fluffy inside. In the meantime, I whipped up a seasoned egg scramble and got my tortillas ready to assemble. I added some cottage cheese, the roasted taters, chipotle mayo, red onion, fluffy scram, salsa, and pickled hot peppers.

Once gorgeous and golden off the grill, I sliced and served. Don't forget the hot sauce. With every bite you take, you should be giving a few squirts of your fave hot sauce. It's a necessity if you ask me. Head to the RECIPES page.

Creamy WB Skillet with Cheesy Pesto Chik'n

Protein all the way with this gorgeous, and rather simple dish. It all starts with a humble can of white beans and a couple chik'n patties I had in my freezer with no intended purpose. Sometimes peeking through the cabinets / freezers is all the inspiration we need lol

I made a quick sauté with garlic, pepperoncini, and onion, and cooked them until soft. Cue the white beans, some plant-based chik'n broth, and some simmering time. Whipping cream and grana padano to finish while the chik'n patties finish with melty mozzarella.

​Service is simple. Place your cheesy patties on top of the creamy beans, spoon some gorgeous, fresh pesto on top, and garnish. So delish you guys and available now through the RECIPES page.

Halloumi Wraps with Pepper Jelly

Over at Food Social, I decided to take part in their Spring Picnic themed event which had me creating a picnic ready recipe that featured a jelly of sorts. I knew I wanted to go with a pepper jelly and halloumi combination because they pair flawlessly together.

I fried up some gorgeous halloumi cheese until golden on both sides. In the meantime, I whipped up my cottage cheese until smooth & creamy and slathered in on to two Greek style wraps. These wraps are similar to a flatbread, but foldable and more soft. Lettuce, tomato, cucumber, thinly sliced red onions, fried halloumi, pepper jelly, and some zippy hot pickled peppers.

Sheet Pan Potato Nachos

First there were the Tater Tot Nachos, and now the Potato Nachos. Revolutionary? Nope. Delicious? Absolutely! I actually put this together as a result of buying a bag of potatoes when I already had half a bag in my pantry. This was the perfect way to use a bunch of them up.

I seasoned and roasted the potatoes until crisp outside, and fluffy inside. Then, I topped them off with my favourite La Costena Mexican Pintos and some shredded aged marble. Once that melted up, it was as simple as garnishing with all of your favourite nacho toppings.

Tomatoes, Jalapenos, Chipotle Mayo, Salsa, Onions, Jalapenos, and hot sauce of course. Super customizable and super delish / easy to make. Head to the RECIPES page.

Whipped Cottage Cheese & Pesto Breakfast Toasties

You guys, whipped cottage cheese is like, my new favourite thing. It's basically a creamy, protein spread that's perfect for a toastie like this. I actually ended up using the leftovers for Triscuits which was also a fab snack.

These toasties feature golden, grilled sourdough, dreamy whipped cottage cheese, my favourite, gorgeously green pesto recipe, heaps of spicy pepperoncini, grana padano, and fresh parsley to finish. When the heat / pesto mixes with that runny yolk, it's so divine.

The cottage cheese provides a creamy, light backdrop to the richness of the eggs & pesto, as well as the heat from the pepperoncini. Perfect brekkie toast vibes. Head to the RECIPES page.
