Pesto Butter Bean Skillet

2 of my absolute favourite things; pesto and butter beans, coming together in harmony to create this fabulously delicious skillet. I had just made my Macadamia Nut Pesto and didn't have any actual plans for it, so when I was scouring my cupboards for ideas, this one came to me.

It's a very simple skillet otherwise; garlic, onions, heat, wine, broth, simmering. That's pretty much it. It's taken up several notches when that gorgeous, green pesto is folded in to the creamy skillet. It's quite magical.

You can serve this as a skillet and people can tuck in to it, serving it on crispy bread. You could even use naan or other handheld bread options and scoop right out of the skillet. I served it up beans & toast style on two toasty pieces of multigrain bread. So delish.

Bill Introduced in the U.S. Aims to Ban Wildlife Killing Contests on Public Land

A new bill was introduced in the United States House of Representatives aiming to ban horrific wildlife killing contests on public land. If passed, 500 million acres of public land will be off limits for these horrendously cruel contests. Wildlife killing contests are embarrassing considering the plethora of entertainment options available to us. All they do is glorify animal brutality and devalue the lives of animals crucial to their habitats. Learn more under the ANIMAL NEWS page.

Macadamia Pesto + Sammies

Ok guys, my obsession for pesto is probably well known at this point. As the warmer weather rolls in, I can't help but crave this gloriously green, delicious spread. It's fantastic as an add in to soups, slathered in sammies, or added to dips for an extra punch of fresh, nutty flavour.

It's also very easy to change the whole dynamic of your pesto depending on what nut / seed you use. I swapped out traditional pine nuts for luxurious macadamia nuts and trust me, this is one swap that you're going to love.

The macadamia nuts made the most creamy and rich pesto. Smooth, decadent, and so flavourful. I was literally eating it by the spoonful lol Get on over to the RECIPES page for the recipe along with one of my fave sammies to make when fresh pesto enters the chat.

Cheesy White Bean & Sausage Fusilli

There's nothing not to love about this cheesy, flavourful pasta skillet you guys. You get all the gorgeous flavour form those Beyond Meat Hot Italian sausages permeating throughout the dish along with a rich, creamy / cheesy sauce, and perfectly cooked fusilli.

The whole recipe comes together in about 45 minutes from start to finish. Searing some sausage rounds, sauteeing some aromatic, bringing everything together with wine and whipping cream, and finishing with out fusilli and a combination of old cheddar & pizz mozz.

Philly Cheesesteak Flatbread

Can I get a hell yes to this wonderful masterpiece? This was my first time seeing / trying Beyond Meat's Steak bits and I must say, I was pretty impressed with them. The texture was meaty, they were flavourful, and they worked perfectly on this gorgeous flatbread.

I sauteed up some garlic, peps, and uns, until almost tender and then added the frozen steak. Cooked down until browned and finished with heaps of pizza mozzarella. Then, I used Nando's Perinaise in medium for some welcome heat and spread that as the base of the flatbread. After spreading the cheesesteak filling and toppinig with more mozz, it's baked until golden brown.

Finished with more perinaise and green onions, sliced, and served. I recommended pickled hot peps but I didn't have them so I ate the flatbread with pepperoncini which worked fine. You definitely want that vinegary punch!

Quick Lentil Tacos

Happy Taco Tuesday you guys! Let's keep things simple this week with my super quick and super delish Lentil tacos. Ya can't beat an easy, delicious recipe like this one that comes together in under 30 minutes.

The lentil mixture is quite simple. Some aromatics, a can of lentils, and some gorgeous spices, cooked until flavourful and tender. Finished with extra old cheddar for some funky cheesiness and served up in corn tortillas with a few dashes of super spicy hot sauce, some diced yellow onions, and heaps of gorgeous cilantro.

VICTORY - Great Britain to Ban Live Export of Animals for Slaughter

After decades of persistent advocacy, a ban on the live export of animals for slaughter will be enacted in Great Britain. This monumental victory will cease the cruel transport of live animals which are often cramped, extremely hot, and lack proper access to any food or water. In fact, even the space to move or lay down is cruelly limited.

Cheesy jalapeno Egg Scram Toasties

When I actually have time to sit and enjoy a nice brunch, I like to have a little taste of a variety of things on my plate. It can't just be a piece of toast; I want fruit, I want salad, baked beans, whatever, I need an assortment of goodies.

I whipped up the easiest scram featuring butter, green onions, jalapenos, and old cheddar. Toasted up some Bavarian sourdough, slathered it in butter, and served the scram on top. Super simple, super satisfying, and nice & cheesy.

When it's time to plate, I go through my fridge and look for whatever little goodies I have around to serve it up with. Fresh fruit is a nice go to for me and in this case, I tore open some dreamy burrata, seasoned it up, and served it up alongside my toastie. Super yummy and satisfying. Head to the RECIPES page.

Bubbly Baked Butter Beans

There was this fabulous Greek / Mediterranean restaurant in my city that has since closed, but they made the BEST food you guys. Their Gigantes (Greek Baked Beans) were probably my favourite thing I'd ever eaten and still today, I dream of them.

When I wrote this recipe, I was attempting to recreate that same magic. Unfortunately, they weren't the same as this restaurant, so I refuse to call them Gigantes, but they're absolutely freaking delicious nonetheless. So, introducing my Bubbly Baked Butter Beans <3

A quick sauté of some aromatics, San Marzano tomatoes, some fresh herbs, and spices like cinnamon and clove, all bake together with those glorious beans until bubbly with the most delicious crusty action on top. These beans are so hearty, so flavourful, and so delicious. Get on over to the RECIPES page!
