Pinto Bean & Chz Quesadillas

Quesadillas are so fabulous because they really don't take a lot of time / effort, and they're absolutely delicious. I whipped up a quick bean and cheese variety that I think you guys will love. I know I did!

Could you open a can of refried beans? You sure could, but my quick pinto mash is super easy, flavourful, and quick to make. After finishing the beans, we slap the mash on some corn tortillas along with extra old cheddar and cilantro, and fry them up on both sides until golden brown.

I served them up with some gorgeous avocado salsa, diced red onions, fresh cilantro, and sour cream. It's a quick meal, snack, or appetizer, however you want to serve it up :) Now get on over to the RECIPES page.

Creamy Tomato Tortellini with Broiled Mozz

Looking for a quick, flavourful tortellini skillet that's ready in under 40 minutes from start to fin? Well, look no further! My Creamy Tomato Tortellini Skillet is perfect for busy weeknights because there's minimal prep / ingredients, minimal cook time, and maximum flavour!

Quite simply, I made a creamy tomato sauce with some tom paste, whipping cream, and wine, cooked some plump tortellini pasta, and brought everything together with some gorgeous grana padano and a splash of pasta water.

Finished with mozzarella under the broiled because a little broiled mozz is always a good thing. Super simple and super delish. Head to the RECIPES page.

Chik'n Pesto Melt Ciabattas

At this point, it should be blaringly obvious that I have a bit of a pesto obsession lol. What's not to love? Gorgeous, herbaceous, vibrant, fresh, it has it all. With that being said, here's another addition to my pesto collection with my Chik'n Pesto Melt Ciabattas!

Warm, toasty ciabatta bread, smothered in vodka sauce and gorgeous pesto. Topped with a plant-based chik'n patty buried underneath the meltiest burrata blanket ever! The ciabattas get a garlic rub down for that punch of garlic flavour in every bite. Finished with basil and grana padano, they're melty, messy, and absolutely fabulous!

Creamy Garlic Bucatini with Chik'n Parm

Literally obsessed with this recipe you guys. I was craving chik'n parm, but didn't want to create ANOTHER chik'n parm recipe similar to the ones I had already put out. That's when the gears started spinning and I came up with this delightful dish.

I whipped up the easiest, garlicky, creamy sauce in the skillet. Some garlic & uns, cream, wine, s & p, and loads of grana padano. I finished the bucatini in the sauce until gloriously glossy and creamy. In the meantime, I baked up some chik'n patties, topped them with mozz and store-bought vodka sauce, and that's it.

That creamy bucatini against the crisp chik'n and contrasting vodka sauce was a match made in heaven. In fact, this is the first time I've had jarred sauce in a while and you know what, it was quite good lol. Head to the RECIPES page.

Pesto + Burrata + Heirloom

This isn't so much a recipe, as it is a reminder to appreciate gorgeous, fresh ingredients. Something as simple as a beautiful Heirloom tomato is inspiration to create a beautiful, colourful plate that focuses on the freshest and simplest ingredients.

I linked a few of my fave pesto recipes for you guys. Some gorgeous, fresh green pesto is quite magical to both the eyes, and the taste buds. Paired up against those gorgeous slices of Heirloom tomato, dreamy burrata cheese, sweet balsamic glaze, spicy chili oil, and a sprinkle of Himalayan salt, cracked pepper, and pepper flakes.

Every bite is magical and focuses on the freshness of each ingredient. This plate screams spring / summer to me <3 Head to the RECIPES page.

Burrito Bowl Stuffed Zuccs

I really struggled with naming these you guys lol I was like, Nacho Zuccs, but there were no crunchy chips on top. Fiesta Zuccs, but that sounded too generic and that's when I landed on Burrito Bowl Zuccs lol they're kind of stuffed and piled with everything you'd likely find in a good burrito bowl so I went with it!

Essentially, I made a Beyond Meat beef and brown rice filling. The filling is spiced with a gorgeous assortment of spices and some green chilis to kickstart that heat. Then, it's folded together with cheddar and stuffed inside hollowed out zuccs.

Baked, topped with more cheese and finished with gorgeous salsa, fresh cilantro, and diced onions. Such a delicious dish you guys!! Head to the RECIPES page!
