Oklahoma Style Smash Burgers

There I was, 6:10 in the morning trying to catch up on my foodie groups when I had the pleasure of witnessing the juiciest looking smash burgers ever. As I sat salivating, yearning for a juicy burger at a ridiculous hour in the morning, I knew I had to try and make them ASAP.

I stumbled across Oklahoma style as I'd seen them on the Food Network many times and always thought that crisped pile of juicy onions was such a fab idea. So, that's what I did and y'all, despite a tiny hurdle or two which I attribute to the learning process, these babies were JUOICY and delicious!

Impossible beef smashed down in to seasoned onions, topped with melty cheddar, and served up on brioche buns with yellow mustard and zippy pickled hot peppers. These were TO DIE FOR. Get to the RECIPES page ASAP <3

Happy International Potato Day Y'all <3
Is there a better holiday to celebrate than one the focuses on my absolute favourite thing on this planet? Potatoes. There's truly no such thing as a bad potato you guys and if you can dream of it, I've done it here at the blog.

Grilled Zucchini Panzanella Plate

I had so much fun plating my Caprese Panzanella Plate that I shared last week. It was so fun to put together and honestly, so light and delicious as well. I knew I wanted to try and do it again a bit differently and that's how I came up with this grilled zucchini variety. I was thinking the green / brown on the plate would be super pretty.

I grilled up some baguette and rubbed them down with garlic. I also grilled up some gorgeous zucchini slices until nice and grilled. Assembly was simple you guys. I plated up some of my pesto around the plate and then arranged my grilled bread, zucchini, and bocconcini. I topped with fresh herbs, crumbled feta, more gorgeous pesto, balsamic glaze, and grana padano.

Chipotle Chili Dogs

I've said this before, but chili really reminds me of my mom. We ate it a lot growing up and once those spices start permeating the air, I'm brought back to my childhood. I just love a good chili and this time, I decided to go with smoky chipotle which not only brings the heat, but also some great flavour.

This chili recipe is absolutely delish and if you didn't want 6to go with dogs, would be delicious with a side of mash or rice. I went with chili dogs because I had a hankering that wouldn't quit. I used the Yves Veggie Jumbo Dogs which are eerily similar to real hot dogs you guys. After grilling, I topped them with cheddar, red & green onions, and crisp Fritos to finish.

Caprese Panzanella Plate

Can I just say that this was so much fun to plate? Originally, I had not planned on including the grilled sourdough but it was like a light went off in my mind and I thought, huh, that would be extra gorgeous wouldn't it? I'm so glad I did because this Caprese Panzanella mashup was DIVINE!

I made a batch of my gorgeous green pesto to start which I'd highly recommend when you're using so few ingredients. Then, I grilled up a piece of sourdough until crisp and cut it in to equal sized squares. I grilled up some cocktail tomatoes until charred and season them with salt, pep, and pep flakes. Assembly is where I got to be creative here and you guys will love assembling this gorgeous plate.

Roasted Asparagus Risotto

Asparagus is in season y'all and nothing says springtime like delicious asparagus dishes. I love when asparagus comes in to season because the price drops from insanely overpriced, to an appropriate price that makes it worth purchasing lol. I love asparagus, but I love it more when it's 2.99 a bunch versus 6.99 lol.

I made a rather traditional risotto that featured shallot, good wine, plant-based chik'n broth, and a combination of lemon, basil, grana, and white cheddar to finish. In the meantime, I roasted up some gorgeous asparagus spears until tender but not mushy. We like a little chew.

To serve, I served up my creamy risotto and nestled some of the roasted asparagus on top. Absolutely divine, creamy & dreamy, and a lovely lemony undertone to finish. Head to the RECIPES page.

Creamy Pesto Maccheroni with Broccoli & Sundried Tomatoes

The first time I tried these Maccheroni noods, I was hooked. They're kind of like large and in charge Casarecce noodles. So much chew / texture, they're quite lovely albeit hard to find.

I snatched another bag when I found them again and this time, I went with a gorgeous pesto sauce. I used my fave pesto recipe for this one and kept things simple otherwise. Some aromatic veggies, heat from fresno chilis, broccoli florets, sundried toms, and good wine. 

I finished the noods in the skillet until they were perfectly al dente and then folded in that gorgeous, fresh pesto with pasta water until things got nice and creamy. Finished with grana, parsley, and basil, this dish is easy and delicious. Head to the RECIPES page.

Adidas Ends The Use Of Kangaroo Leather

In a victory for Kangaroos, Adidas has quietly ended the use of kangaroo leather in their products sparing hundreds of thousands of kangaroos needless death. Kangaroos are shot at night, left to die regardless of whether they have babies with them, and babies are often bludgeoned or discarded, all for skins to make cleats and other fashion products.

Cheesy Bruschetta Browns

Another loaded hashbrown sitch coming at you guys. I'm fairly obsessed with hashbrown patties you guys. Crispy, salty, addictive snacks, and especially delicious when topped off with fun toppings.

I decided to go with a bruschetta hashbrown this time around. I crisped up the browns in the oven and in the meantime, made a quick bruschetta topping that featured medley tomatoes, basil, garlic, and red onions. Once the browns were crisped, I topped them with some pizza mozz and melted that up in the oven.

Once melty, I spooned the bruschetta topping on to each cheesy brown and finished with some grana padano, sweet balsamic glaze, and fresh basil for garnish. Cheesy, crisp, fresh, all the good things. Now get on over to the RECIPES page.

Jalapeno Cheddar Oven Chipped Taters

Looking for another way to enjoy taters? try these oven chipped jalapeno cheddar potatoes! Thin slices of potatoes overlapped on a baking sheet and seasoned with pep flakes, s & p, and dried parsley. 

Once baked, they get nice and crispy around the edges while the center potatoes become ridiculously soft and tender. I then topped them with aged marble, diced red uns, and jalapenos, and returned them to the oven until melty.

Finished with sour cream and green onions, these taters are addictively delicious. I suggested 3+ servings, but that's very dependent on everyone's hunger levels. I managed to consume 1/2 the tray myself lol Head to the RECIPES page.
