Spring Veggie Drop Dumplin' Soup

Our spring has been all over the place this year. When it first started, it was so bloody hot I thought soup season had come to an abrupt end you guys, but things have cooled down to regular spring temperatures now which means we can still enjoy a cozy bowl of soup.

I was craving drop dumplings and decided to utilize all of the produce I had in my fridge to whip it up. Broccoli, leeks, snap peas, zucchini, all the good veggies. Good wine, some seasonings, and my Mimi's recipe for drop dumplings. The dumplings cook right in the soup until plump and firm.

I finished with heaps of pecorino, fresh parsley & fresh dill. So much flavour, just the right amount of heat, and those dumplings are so freaking comfy and delish. Head to the RECIPES page.

Dill Pickle Egg Salad Melt Toasties

A good breakfast toastie is the perfect way to start the day, and my new Dill Pickle Egg Salad Melt Toasties will quickly become one of your new fave toasties. Creamy, sharp, cheesy, and zippy from those dill pickles.

The egg salad comes together super quickly. Crispy veggies, fresh herbs, pickles, mayo, pickle juice & mustard. Then, it's imperative that the salad refrigerates for some time to come together and firm up a bit. Once the chilling period is over, assembly couldn't be faster & easier.

I grilled up some sourdough until crispy and golden on both sides. I set my oven to BROIL and got the toasties onto a parchment lined baking tray. Then, egg salad, a hefty handful of aged white cheddar, and some time to melt in the oven. Finished with crisp pickles, a pinch of pepper flakes, and some fresh dill. Saucy Jumbo Meatballs

I was REALLY craving meatballs and wanted to switch things up, so I went with a jumbo version and they were absolutely delish. So juicy and tender, absolutely perfect you guys.

I made a spicy, blended red sauce that featured good wine, veggies, Italian tomatoes, & basil. I love a blended sauce, especially in this case. While the sauce simmered away, I whipped up my jumbo sized meatballs and seared them off in a hot skillet. Once they were golden on both sides, I moved them to the oven to finish cooking until tender.

For service, some sauce to start. Then, I nestled the meatballs in the sauce and smothered with additional sauce as well. A good drizzle of spicy chili oil, heaps of finely shredded pecorino, and some fresh parsley. So delish you guys. Head to the RECIPES page.

Crispy Chik'n Spin Dip Sammies

There I was, doom scrolling on Pinterest when I spotted a crispy chik'n / spinach dip sitch that looked SO freaking delicious. I didn't click on the recipe, but I took a visual photograph so I could recreate my own way when the time was right. Creamy spin dip on crispy chik'n? I was sold.

I baked off my favourite Gardein Supreme Chik'n Filets until gorgeously golden and crisp. Then, I melted some extra funky, aged English cheddar on top. I grilled some pretzel buns until golden and slathered them in some creamy spinach dip. You could also warm it up, but I wanted the contrast between crispy hot patty and creamy, cool spin dip.

Toasty pretzel buns, creamy spin dip, crisp red uns, fresh lettuce, and crispy, cheesy chik'n filets. So satisfyingly delicious and easy to make. Peep the RECIPES page.

Boursin Tomato Crostini

I'm all about a quick snack; something that is not only satisfyingly delicious, but easy and quick to put together in  a pinch. That's where these dainty little delights come in.

Anytime I'm at the grocery store and I can tell the in store baguettes were recently baked and put out, they're in my cart. Fresh bread is a weakness for me. When I got it home, I had no plan, but I remembered having some Boursin which is always a good starting point.

I grilled up the baguette slices until golden and crispy, and rubbed them down with garlic. Then, a smear of creamy shallot & chive Boursin cheese, some thinly sliced Campari tomatoes, a drizzle of chili oil, pep flakes, s & p, some fresh basil, pecorino, and pea shoots to finish.
