My Smashed Chickpea Salad is a summer staple for me. I love how fresh and delicious it is and I love it right out of the bowl, on veggies, or in this case, on gorgeous, grilled sourdough for a nice melty toastie.

This salad is a fab alternative to tuna or egg salad and all you need is a can of salt-free chickpeas! Once your salad is assembled, we let it chill for a half hour and then assemble. Grilled sourdough, smashed chickpea salad, extra old cheddar, and pepper flakes. After broiling, some fresh chives and pea shoots, and that's it!

Fiery Red Pesto Paccheri

Paccheri noodles quickly became one of my fave shapes after my first time trying them a month or so ago. The size, the texture, the chew, they're quite literally the perfect nood. Any time I spot them, I snatch a bag and start planning my next sauce.

I found a tomato based pesto in the Italian section of the grocery store last time I was there and thought that would be perfect with these noodles. A little wine, some onions and garlic, pesto, pasta water, grana padano, and fire from pepperoncini and Red Thai chilis. Easy, so delicious, and obviously on the spicy side of things.

Cheesy Hominy Skillet Tacos

Another Taco Tuesday is upon us and I'm serving up some stupid cheesy and stupid easy Hominy tacos! If you've never tried Hominy, you're in for a treat. It has so much texture, it's quite delicious!

A sauté of onion, jalapeno, pepper, and garlic to start things off. Once the hominy is folded in, we season with a combination of spices including chipotle, Tex-Mex, and garlic, and stir in tomato paste for extra depth. Once everything is nice and tender, it's as simple as topping with cheese and leaving covered while we warm up some tortillas.

Cheesy, dreamy deliciousness that couldn't be easier. Scoop straight from the skillet in to your tortillas and top with some crisp onion, fresh cilantro, and salsa. So delish. Head to the RECIPES page.

Hot Cherry pepper Butter Bean Skillet

If you guys haven't hopped on the butter bean train yet, what are you waiting for? Y'all know by now, I'm freaking obsessed with butter beans. So smooth, creamy, rich, and just plain delish. I also enjoy how easy it is to create a lovely meal out of a simple can of beans and some household staples we already have!

I found hot cherry peppers at the grocery store so I built this skillet around the idea of spice. You get heat from pepper flakes, chili oil, AND the cherry peppers for a well rounded heat experience. You get rich, buttery beans, fresh herbs, a little lemon, and some grana padano.

These skillets are so easy and so delicious. Plus, they're an excuse to eat as much grilled, gorgeous sourdough as you possibly can and what could be wrong with that? Head to the RECIPES age.

Pesto Chik'n Burgers

First of all, let's celebrate Gardein's Supreme Plant-Based Chik'n line! I can confidently say that this line is in my top 3, best plant-based chik'n products I've ever had! Crispy, juicy, flavourful, they're literally perfection.

With that being said, these Pesto Chik'n Burgers hit all the right notes and they couldn't be easier to make! While the juicy, crispy patties bake up in the oven, you have enough time to whip up my Macadamia Nut Pesto and toast some buttery brioche buns.

​Slap those patties on grilled buns along with some crispy lettuce, tomatoes, red onions, creamy pesto, mayo, and pepperoncini. These are divine and available now under the RECIPES tab!

Spicy Coconut Red Curry Noodle Soup

Guys, I'm obsessed with this one and you will be too. I created this fun little mashup with spicy curry, and Pho in mind. I wanted lots of noodles to eat with my chopsticks that I'm getting better with every time I use them, I wanted crisp, fresh veggies, and fiery coconut curry broth.

The recipe is actually quite simple. The spicy coconut curry broth is so flavourful and sinfully hot, which I love. Then, it's as simple as quickly cooking some rice noodles and assembling.

You get crisp veggies including broccoli, snap peas, and celery. You get unforgiving heat thanks to fiery Thai chilis, and you get the most delicious broth. I was barely able to stop myself and you can bet I picked that bowl up and slurped all remaining broth lol Head to the RECIPES page.

Corn Queso Skillet

Corn and cheese are best friends as far as I'm concerned and my Corn Queso Skillet lets that friendship take center stage. Creamy, cheesy, spicy, and just plain addictive.

It starts with some sauteing of garlic, poblano, jalapenos, and onions until soft. Then, we fold in our fresh corn and seasonings. Room temp cream that just barely starts to bubble before we reduce and simmer until rich and creamy. I added a cob to the skillet to really reinforce that delicious corn flavour.

Once it's done, we fold in a collection of cheeses and garnish with some beautiful, colourful add ons and that's it. It's so ridiculously creamy and cheesy & full of juicy corn. Such a great dip you guys! Head to the RECIPES page.

The announcement that Japan and Iceland would resume commercial whaling this year has sparked international outrage. Whales suffer tremendously prior to their deaths and already face incredible perils to their survival. Pesto Penne with Roasted Toms and Cheesy Chik'n

I love me a quick meal and this one really couldn't be easier you guys! It starts with a fresh batch of pesto. I linked three of my fave recipes in the post for you guys but as I always say, if you have a jar on hand and want to keep it even simpler, you know what to do!

While I baked the chik'n patties, I also baked the tomatoes simultaneously in some cooking spray, pep flakes, and s & p. Once the cheese was melted and toms were gorgeously roasted, it's as simple as tossing the cooked noods in pesto and serving it up.

I love this recipe because of how quick, delicious, and easy it truly is. Minimal prep, minimal cook time, and everything comes together quickly. Perfection. Head to the RECIPES page <3

Rigatoni Primavera

A good primavera screams spring / summer to me thanks to all of the glorious veggies added. You can really play around with what veggies you add because this recipe is pretty adaptable in that way. Just make sure you don't cook the daylights out of your veggies. I enjoy them to still have some crispy action.

Super simple sauce of wine, EVOO, broth, and a combination of veggies including broccoli, zucchini, and snow peas. It comes together rather quickly while the pasta boils and then is finished with a fresh and delicious combination of herbs for that pop of brightness.

I added dill which is very zippy and fresh which I think paired perfectly with this wonderfully veggie forward pasta dish. Hungry? Head to the RECIPES page!
