Pinto Crunchwrap Supremes

7/29/2026

We've all probably come across at least one version of taco Bell's crunchwrap. I've had them, they're good, but I never really thought they were as spectacular as their cult following would suggest. With that being said, they're super easy to make at home and honestly, I think they're better than the ones at the restaurant.

I used some Mexican seasoned pinto beans and smoky chipotle queso. Then, crispy tostada, Baja sauce, lettuce, tomatoes, and onions. Folded up, fried until golden brown on both sides, and served with crunchwrap sauce.

Hardly healthy you guys, but certainly better for you than the ones at TB. So easy to make, so much flavour, and they're quick to put together too for busy weeknights. Everyone will love them! Head to the RECIPES page.

Buttery Cajun Cobs

HAPPY VEG

I couldn't love fresh corn any more than I do if I tried. While I enjoy it as is, smothered in buttery goodness, I thought it would be fun to try things a bit differently with these Buttery Cajun Cobs. I had an idea of how I wanted to make them and when I googled Cajun Butter, I was bang on with my idea. Look at me go lol

I peeled, trimmed, and halved the cobs, placing them in a tinfoil "bowl". I dropped in a bunch of butter and some lemon wedges, closed it up, and baked them off until bright and golden. The butter was simple too. Butter and garlic, Cajun seasoning, Valentina super hot sauce and lemon juice.

Once the cobs were done, I brushed them with the butter and then poured the remaining all over them. Absolutely freaking addictively delish y'all. Head to the RECIPES page.

HAPPY VEG

You guys know I LOVE trying all of the new plant-based goodies that hit the market. I'd say in most cases, I enjoy pretty much everything. I spotted these new chicken cutlets from Middleton's Plant-Based foods and was super excited to try them out. I had the most magical sandwich in mind for them.

The price point on these was super steep, so I was expecting them to be especially inspiringly delicious. Sometimes you try something after you've hyped it up and it either delivers, or it doesn't. In this case, you'll have to head to the BYPASS or BUY page to get the scoop.

While you're there, I've linked some incredible products from Wayfair Canada for their Christmas in July sale. So many incredible products up to 80% off. If you ever see something, send me the product and I'll send you a link that helps me out a bit :) Head to the BYPASS or BUY page <3

Chipotle Queso Chili Dogs

HAPPY VEG

These sorts of meals are the kind of thing I make when I want something naughty with minimal effort. Yes, I totally prefer to make a batch of chili from scratch, but in this heat? I'm not letting ANYTHING simmer for 2 hours lol

These dogs came together quickly and satisfied that chili dog craving. My fave brand of plant-based dogs doesn't exist anymore, so I went with Lightlife and they were equally as good despite not loving the colour of them out of the package. I used Sprague veggie chili which is a brand I really love with good quality ingredients and no fillers. The queso came from Casa Bonita and had a significant smoky presence.

Dogs, chili, queso, red onions, and spicy jalapenos to finish. Ready in under 25 mins from start to finish, sometimes a quick cheat meal hits the spot. Head to the RECIPES page.

Fried Halloumi Sandwiches

A good sandwich always hits the spot. It has been so unforgivingly hot that I've been looking for things to make that either don't need any cooking, or at least very minimal. That's where my yummy halloumi sandwiches come in.

Halloumi is so delicious and when you fry it up, it gets so gorgeously golden brown. The texture is squeaky and the cheese itself is salty and delicious. I fried up my halloumi in some EVOO until golden on both sides and then assembled these super simple sammies.

Toasted bread of choice; I went with an everything loaf from the market. Once toasty, some butter & mayo, fresh living lettuce, juicy tomatoes, red onions, the fried halloumi, and a drizzle of balsamic glaze. The sweetness pairs so well against that super salty halloumi. Easy, minimal cooking, and delicious. Head to the RECIPES page.

Greek Pasta Salad

HAPPY VEG

Is there really a more summery vibe side dish than a good pasta salad? Making appearances at backyard bbqs and get togethers for a s long as one can remember. I mean, it's kind of the perfect side for all of your summer faves; burgers, dogs, anything from the grill really.

I decided on a Greek inspired salad because I had my favourite Greek dressing from Le Grec in the fridge. I boiled off some rotini pasta until tender but not mushy, and then strained and cooled that off. Then, fresh veggies and herbs join the pasta party along with a heap of tangy, salty feta cheese. Dress, toss, and refrigerate until service.

I skipped the olives this time because I didn't have them, but some olives would most definitely go well here. I also thought about adding pickled hot peppers for a nice, mildy spicy tang which I would say would also go if you wanted to add some as well. Quick, satisfying, and total summer vibes. RRP & Boursin Breakfast Toasties

There's nothing quite like having the time to put together an inspired breakfast toastie. That's not to say good old eggs and toast don't hit the spot, but a few add ins and you've got something extra special & delicious.

I started with my new obsession, this gorgeous Everything bread baked at my local market. Soft and so flavourful. Toasted, slathered in butter, Boursin, and topped with sliced roasted red peppers. Then, two perfectly fried eggs, seasoned simply with yolks that are ready to burst.

Finished with a sprinkle of feta cheese for an extra savoury tang, and fresh dill for that zippy pop of green goodness. Everything works together so well and honestly, so simple yet so delish. Head to the RECIPES page and make these toasties.

Summery Stracciatella Toasties

HAPPY VEG

I spotted Stracciatella cheese at the market on my last trip and almost fainted with excitement lol. What a cool find. Basically, it's the creamy insides of burrata cheese, minus the mozzarella casing. Spreadable, dippable, and absolutely divine.

Naturally, I had to put together some gorgeous toasties. First off, it started with a fresh baked loaf of everything bread form the market. For a recipe this simple, every component needs to be premium. Next, a gorgeous, local heirloom tomato is the only way to go for these toasties. Then, assembly and ingestion.

After toasting the everything bread, it received a slathering in butter and a generous scoop & spread of the dreamy Stracciatella cheese. A couple slices of tomato, a drizzle of seductive balsamic glaze, and some salt, pepper, and pepper flakes. A couple leaves of basil and voila. A summery snack that just hits with quality ingredients. Head to the RECIPES page.

Good Old Tater Salad

7/10/2026

I'm a huge sucker for a good tater salad. There's this place out in the county that I only visit when I get the chance to hang out with my friend Lauren, and they sell the most classic and nostalgically delicious tater salad. So basic, but in the very best way.

I've seen many a bougie tater salad in my life, but there's something so satisfying and nostalgic about a good old classic. Mayo, mustard, crispy veggies, pickle juice, and some hard boiled eggs. Simply seasoned with just salt & pepper, and left to refrigerate until everything comes together.

This tater salad is what I'd like to call your traditional style. No bells and whistles, but it doesn't need them. Creamy, crisp, and so satisfying. Head to the RECIPES page.

Creamy Cannelloni Skillet with Pesto

HAPPY VEG

Bookmark this recipe for when the weather cools down a bit, or, if you have a seriously good air conditioner. I made the mistake of thinking this was going to be quick when it was over 100 degrees outside and almost died lol

I was really craving some kind of creamy pasta, and ended up snatching the Olivieri Spinach & Ricotta Cannelloni for a bit of a shortcut. I whipped up a batch of gorgeously green pesto before making a quick wine & cream sauce. Then, it's as simple as baking the cannelloni in the sauce until bubbly, topping with mozz, and finishing until golden.

I dolloped the pesto around the skillet along with parsley which really popped against the golden cheese. What can I say? It was rich, creamy, and so delicious, but perhaps the wrong dish for a heatwave lol Save this for fall y'all! Head to the RECIPES page.
