Sunday Scram

Sundays are for good egg scrams you guys, that's what I say anyways. A good egg scram is quick, loaded with protein, and when you add in some extra goodies, it's extra delicious.

I fried up some pepper flakes and garlic, two ingredients that I use in basically everything lol. Then, some onion, a pile of fresh baby spinach, and our eggs and cottage cheese. Once that firms up, you're all set.

I love my Sunday scram served up with whatever I can find on hand. I typically love some potatoes of any variety, but this time I kept it simple and went with some golden toast and fresh fruit. Cheesy Dill-Icious Smashed Taters

Attention pickle lovers! I have the most addictively delicious smashed taters for you to enjoy here and I know you're going to love them! Pickley, cheesy, and so snackable.

I boiled off some russet chunks and then smashed them up on a tray. After some time in the oven, I slathered them in a savoury dill mustard and then returned them to the oven. After some time, I flipped them and let them continue until gorgeously golden.

I topped each tater off with aged white cheddar, a slice of spicy dill pickle, and some spicy pepper flakes. Once they were melty and gorgeous, I finished the tray with fresh chives and dill. Served with Ranch, these taters are so addictively delicious. Get on over to the RECIPES page.

Crispy Chik'n Ranch Salads

Summer is winding down here, so I'm trying to get in as many salads as I can before I switch to bubbly, comforting baked dishes as the weather dips. My new Crispy Chik'n Ranch Salad hits all the right notes y'all!

Romaine, onion, cukes, chives, and heaps of grana padano, tossed with Ranch and topped with juicy Roma tomatoes, smooth avocado, tangy feta cheese, crispy, plant-based Gardein supreme filets, green onions, and pops of fresh dill.

Every bite is so delicious and there's always a different combination of ingredients to nosh on. The crispy chik'n is the perfect crunch for the salad while the veggies layer that crunch with the freshness from the herbs. Absolutely delish. Head to the RECIPES page.

Lemon & Dill Lentils

Lentils really are a superfood. Loaded with protein and fiber in every delicious serving, you're fueling your body the right way. I whipped up a rather summery lentil dish that featured gorgeous, fresh dill, and lemon to round things out.

This recipe is so simple and features a good old can of lentils. I always have at least one can in my pantry for easy, nutritious recipes like this one. Simple ingredients we always on hand like garlic, pepper flakes, onion & celery, along with good broth, lemon juice, and a hard cheese rind that enhances the broth with a nutty undertone. 

After simmering, we finish with more lemon, loads of fresh dill, and nutty grana padano. I garnished my servings with more grana and dill, some pepper flakes, and tangy feta to round things out. So delicious you guys and so easy too. Head to the RECIPES page.

Buffalo Chik'n Caesar Salads

An inspired salad is one that I'm about y'all. I don't really love like, a basic, boring garden salad that's there just because we think it has to be. I like my salads to have some sustenance, pizazz, and they should make me want to dive in.

I was inspired by a foodie friend I met on Instagram who created the most loaded buffalo Caesar, I knew I wanted to put my spin on that idea. I baked off some Gardein Supreme plant-based buffalo bites until golden, and then sauced them in the fiery buffalo sauce.

In the meantime, I tossed together a quick Caesar with romaine lettuce, crispy red onions, heads of grana padano, cracked pepper, and some dressing. I served that up & garnished with the saucy bites, crunchy croutons, green onions, tangy, salty feta cheese, and a lemon wedge. Such a freaking delish salad y'all, get on over to the RECIPES page.

Barley Risotto

There I was, searching for inspiration in my kitchen as lead in to grocery day. There was food, but what the heck was I going to make. That's when I realized I had three mason jars full of barley that I had completely forgotten about. Could barley make a creamy and dreamy risotto I wondered. 

I used the exact same method as I would if I had used Arborio rice. Garlic, heat, and veggies, cooked until soft. I toasted the barley before bathing the skillet in good wine. Once reduced, ladle upon ladle of broth until absorbed. With every ladle, the barley got more plump and the skillet more creamy.

By the end of it all, it was just right. Some butter, basil, and grana padano to finish. I served it up with a simple salad and let me tell you, the texture of barley is my fave. So toothsome. Get on over to the RECIPES page for this lovely alternative to rice based risotto.

Wayfair - Pasta Bowl Stoneware

#ad I have literally been on the hunt for bowls like these locally for what feels like months. Why didn't I think to check Wayfair y'all? When my sister was shopping for decorative items for her rental, the both of us sat on Wayfair for hours, scrolling through pages upon pages of beautiful options for her space. I was so inspired by how easy the site was to navigate, and all of the fabulous options available. 

So, I decided it was time to pop in and find exactly what I was looking for, and I did just that! I snatched these gorgeous Stonewear Pasta Bowls from Joss & Main and I couldn't be happier with my purchase <3
First of all, I'm obsessed with the colour. They were available in 4 shades, but the grey / white combo really fit my vibe. I love the sturdiness of the Stoneware and I love that it's both microwave & dishwasher safe as well. Why did I want these style of bowls? Well, I love a rimmed bowl because it minimizes the opportunity for a mess. The bowls are shallow and rimmed which allows for just about anything to be plated in them. A gorgeous pasta, a chunky soup, or perhaps my upcoming pantry purge stuffed peppers? 

One of the things I especially like is how easy they are to store. They're flat bottomed which allows for easy stacking and storing, minimizing clutter in your cupboards. I could go on and on about why I absolutely love them, but let's get to the point <3
