Roasted Tater & Cauli Burrito Bowls

Burrito Bowls are honestly one of my favourite things to make / eat. They have lots of yummy components that all come together for a hearty, flavourful meal and if you've seen my brunch plates on Instagram, you know I love variety.

I roasted some seasoned cauliflower and russet potatoes until gorgeous out of the oven. In the meantime, I made a quick vegetable rice with lime and fresh cilantro as the base of the bowl. Simply seasoned but with just enough fresh flavour to add a little something to the bowls.

Assembly is simple. Rice as the base, some Mexican Pinto beans on top along with the roasted veggies. Then, it's all about the garnishes. Shredded cheese. salsas, sour cream, and heaps of gorgeous cilantro. Oh, and obviously hot sauce. Always hot sauce lol Head to the RECIPES page.

Zucchini Fritters

Honestly you guys, you can't really beat golden brown, fried anything lol There's something magical to my ears as something bubbles away in hot oil, it's just such a vibe.

My Zucchini Fritters are so easy and so freaking delish. Quite simply, we squeeze the liquid out of shredded zucchini and add things like green onion, cottage cheese, egg, and flour. Once worked together, I fried them in batches in hot EVOO until golden brown and gorgeous.

These are a fab addition to a breakfast / brunch spread but are also absolutely fabulous on their own. Serve them up with some sour cream and green onions and you're good to go. Head to the RECIPES page.

Leek & Zucchini Orecchiette

Everything about this pasta dish is just perfect as far as I'm concerned. First of all, I just adore orecchiette noodles. Despite their small size, they're texturally pleasing and have a fabulous chew / bite. Just make sure you're watching them when they cook so that they don't go over. Nothing worse than overcooked noods you guys.

This dish is quite simple but delivers. Some garlic and heat start things off before leek and zucchini are added to the mix. Some wine of course and once our noods are cooked, we finish them in the skillet. Once al dente perfection, some lemon, herbs, and grana padano to finish.

You get an undertone of heat in every bite along with tender zuccs and glossy orecchiette noodles. Delicious and available now under the RECIPES tab.

Quick Tater Tacos

Looking for an easy, weeknight taco recipe that everyone is guaranteed to enjoy? Peep my Quick tater Tacos. Minimal prep and as simple as roasting some gorgeous potatoes and assembling, it doesn't get easier.

The taters are tossed in a blend of seasonings including Mexican Chili, Chipotle, and Tex-Mex. Once coated, they're baked until lightly crisp outside and so fluffy and perfect inside. Super easy.

Warm up some corn tortillas, slather on some refried beans, some of the taters, and some salsa, onion, and cilantro. Don't forget the hot sauce! I opted out of cheese but you could easily add some shredded cheese or feta on top if you'd like. Head to the RECIPES page.

Cheesy Skillet Shells with Air Fried Broc & Buttery Garlic Ritz Crumb

Woohoo! Remember all of my skillet shells from last year? I had the Pesto Brussel Sprout version, Buffalo Cauli, and the Hot Cheetos, all of which were freaking amazing. I figured it was time to get back to creating new versions because let's be honest, a big old batch of cheesy shells is never a bad thing.

I started by making a gorgeous Ritz cracker crumble for the top. Super simple, some butter and garlic, and the Ritz crumbs until golden and toasty. I then air fried some broccoli until slightly charred and worked on the cheesy sauce. Once the sauce is rich, I folded in a combination of Monterey Jack, Marble, and Old Cheddar until ridiculously cheesy and then I folded in the shells until coated. Finished under the broiled until golden and melty, topped off with the air fried broc and Ritz cracker crumbs. 
You get rich and cheesy. You get some charred action which helps to cut some of that richness, and you get little crispy bits of toasty Ritz crackers. I'm obsessed with this skillet and I think you guys will be too!

2 New Smoothie Recipes For Y'all

I became rather obsessed with making smoothies as a result of working at the restaurant for 8 years. I didn't own a blender at that time, so it was honestly my first time having smoothies embarrassingly lol Obsessed.

I'm always playing around with different fruit combinations to create new smoothies. They almost always have spinach for those extra nutrients and green power, hemp hearts for nutrients and a little protein, and some kind of superfood powder. The superfood powders add so many antioxidants and vitamins to each smoothie, it's a great way to amp up the nutritional factor! Head to the RECIPES page.

US - Biden Administration Looks to Strip Protections for Grey Wolves

The Biden administration has shockingly decided to go after grey wolves, looking to strip any remaining Endangered Species Act protections from them. If this happens, their lives will be in the hand of individual states which will undoubtedly see them plunge towards extinction. We did this already. We need REAL solutions to the problems, not culling wolves to extinction.

Baked Caprese Baguettes

Is there anything better than bread from the oven? Toasty and warm and so inviting. I mean, I just love bread period you guys lol Carb addict over here!

These sammies are delicious and come together so easily. It starts with a gorgeous batch of toasted pine nut pesto. I've started adding a few roasted & salted cashews to my pesto which I find adds a nice, creamy nuttiness, and extra salt. Once you've got your pesto, it's easy peasy from there.

​Warmed baguettes smothered in pesto, gorgeous vine tomatoes, melty pizza mozzarella, sweet balsamic reduction, and pickled hot peppers. Such a good sammie you guys! Head to the RECIPES page.

Tagliatelle Bolognese

My boss gifted me a bag of her favourite tagliatelle noodles, so naturally, I had to make a banging bolognese. Tagliatelle is perfect for a meaty sauce like a good bolognese, they pair so perfectly together.

My bolognese features familiar ingredients like carrot, onion, thyme, plant-based beef, wine, broth, and milk, simmered down for up to 2 hours. The longer it cooks, the more intense and flavourful your sauce becomes. I think this sauce is one of my faves, simply because it's had so much time to intensify.

Brunch Beans

You guys know I have a serious affinity for butter beans. They're so creamy and smooth, hearty, and make the perfect base for this fun little brunch skillet I created!

First of all, I would like to address the busted egg on the right side. I want y'all to know they were cooked perfectly, but my ability to transfer them from their frying pan to serving dish is less than stellar. I ALWAYS break one and it's so irritating lol

Anyways, super simple skillet of some aromatics, butter beans, some wine, broth, and herbs / grana padano. Topped with fried eggs, green onions and parsley, grana padano, and served up with some crispy crostini. I didn't even use plates you guys! Just serve up the skillet and tuck in with your crostini!
