Jalapeno Cheddar Meatball Sliders

Easy peasy vibes for this week's meatless Monday with my new Jalapeno Cheddar Meatball Sliders. A little spicy, cheesy action and they couldn't be easier or quicker to make.

I used my standard meatball recipe but swapped out the Italian ingredients for some aged cheddar and jalapenos for a nice kick. Once I seared those off until golden on both sides, I assembled them on slider buns, topped them with cheddar, closed them up, brushed them with butter, and finished with a slice of spicy jalapeno.

Once they baked off in all of their golden glory, I served them up with Taco Bell Baja sauce and my fave Herdez guacamole salsa. The Baja sauce is addictively good if you can find it. Super creamy with a bit of a Ranch vibe, but also notes of cheesiness also. It's so yummy y'all albeit not the best for you lol Head to the RECIPES page.

Ranch Taco Salads

Will this be my last loaded salad of the summer season? We'll just have to see. This time, I went with a Tex-Mex approach to my loaded salad and it was full of flavour and fabulous textures.

I roasted a cob of corn in butter and then tossed with lime juice, Tajin, and salt. I also cooked up some Impossible beef with garlic, onions, and seasonings until crumbly and flavourful. Assembly was super simple for this one.

Romaine and red onions tossed with Ranch and divided between dinner plates. Then, our meat, corn, shredded cheddar, and garnishes which included spicy, raw jalapenos, green onions, and gorgeous, fresh cilantro. Creamy Cauli Rice Casserole

Who's ready for casserole season y'all? I sure as heck am, let me tell you. I absolutely adore the cozy fall / winter eats and I'm getting things started with this gloriously cheesy, cauliflower rice casserole.

I modeled it after my Broccoli version, but cranked up the spices and swapped out the topping for a brioche crouton sitch. I started by blanching some cauliflower and then got started on my cheesy sauce. Butter, garlic, pep flakes, and onions until tender. Then, flour, cream & milk, and a few minutes of simmering.

I folded in a combination of aged cheddar & marble, mozz, and grana padano. Then, everything is folded together and transferred to a baking dish. Finished with more cheese and the crouton crumbs, this baby was baked to bubbly, golden perfection. Rich, cheesy, and stick to your ribs good. Head to the RECIPES page.

Emergency Stuffed Peps

Stuffed peppers are my go-to meal when I've got ingredients that are half used, in need of being used, or everything in between. Peppers are super neutral so they enjoy a variety of fillings and still taste delish.

This recipe was actually a result of buying peppers and realizing I still had two gigantic red bell peppers from my last shop. I had some almost finished Monterey Jack, a few random jalapenos, and a half package of plant-based meat. Voila, peppers lol

Once I had the filling all set, I folded in some aged cheddar to get it nice and cheesy. Then, stuffed the peps, topped with more cheese of course, and baked until tender. Easy, familiar, and always a great way to use up a bunch of random ingredients that need to be consumed. Head to the RECIPES page.

Meatball Burgers

As you all know by now, I'm pretty obsessed with meatballs. Ever since I created my first meatball recipe using good quality plant-based meat, I've been obsessed ever since. I try to use the recipe for a bunch of different ideas like my new Meatball Burgers.

I had the idea of using my meatball recipe and making patties instead, so I gave that a go and it turned out so deliciously well. I made a batch of blended sauce but you could always use a jar of your fave marinara to save time. Once the meatball patties baked off, I topped them with sauce & pizza mozz, and finished them until melty.

I grilled up some basic hamburger buns and gave them a garlic rub down. I served the burgers with a generous dusting of grana padano and that's that. So delicious you guys, I'm already thinking about making them again lol Head to the RECIPES page.

Friday Flops - What Went Wrong

Flops are an unfortunate part of the creative process and I would never share recipes with you guys to use in your homes that didn't work out 100%. With that being said, I still like to share them with you and explain what went wrong. It's good to have that information in case you ever encounter a similar situation. Pierogies My Way

Inflation hit like a ton of bricks y'all, am I right? It was like I blinked and suddenly everything around me was giving major sticker shock vibes lol With that being said, pierogies have remained an economical choice and thank goodness, they're one of my absolute favourite things to eat.

There's a million ways to enjoy pierogies, but when I'm craving them, this is my go-to method. Loads of onions, garlic, butter, heat, golden, fried pierogies, and sour cream. It's the perfect combination and honestly, they seriously hit the spot every time.

Cheesy Beef & Broccoli Baked Taters

We are approaching my favourite time of the year for food everyone. Cozy, comforting, stick to your ribs eats that fill you up and leave you feeling cozy and ready to relax.

Loaded baked potatoes are pretty much my favourite thing ever to eat. I mean, first of all, it's well known by now that I'm pretty potato obsessed. When you can make the potato the vessel for your delicious dinner, I'm completely sold.

I made the easiest beef and broccoli filling that featured Beyond Meat beef, tender broccoli, heavy cream, and Monterey Jack. Then, I simply stuffed the potatoes to the brim, topped them with more cheese of course, and finished them in the oven. A dollop of sour cream and some green onions to finish and you've got a hearty and fab dinner for 2.

Egg Salad Avo Toasties

Avocado toasts have had a good run, haven't they? Once seen as a bougie sitch, it's caught on as something that is quick, accessible, and delicious. While I certainly love a good avo toast moment, there's an undeniable lack of protein happening that this recipe addresses.

Egg salad is cheap to make, delicious, and gives your avo toast a little protein boost for a more rounded snack / lunch. I whipped up a batch of creamy egg salad full of crisp veg and fresh herbs. Once that set in the fridge for 30 minutes, it was avo toast time.

Crispy, toasted sourdough, slathered in butter, smashed avocado, and creamy egg salad. Finished with some green onions for a little crisp action, they're undeniably delicious and easy to make. Head to the RECIPES page.
