Sheet Pan Za with pesto

This was both super fun and rather frustrating to make you guys lol the package of fresh dough was very vague in terms of usage so I struggled a bit getting everything stretched out lol With that being said, it turned out F A N T A S T I C !!

Once I got my dough to fit my tray, I started with some pizza sauce and heaps of shredded pizza mozzarella. I topped it off with my fave toppings including tomatoes, pickled hot peppers, feta, and red onions, and baked until perfect.

Once finished, I drizzled the za with some gorgeously green, fresh pesto that I whipped up. The pesto brought some nutty and fresh notes to each slice which was simply divine. The pickled hot peppers provided both acidity and heat which cuts through the richness of the cheese. She's perfect y'all! Head to the RECIPES page.

Sundried Tomato Pesto Risotto with Cheesy Chik'n

I originally tested this idea with a store-bought, 2 minute microwavable risotto, and if you guys remember, that risotto was DANK! Gosh, literally one of the worst risottos I'd ever tried lol Completely devoid of any good flavour and honestly, it tasted like a dusty pantry.

With that being said, here's a version I KNOW you guys will just adore. Same idea, scratch made risotto. Onion, garlic, heat from pepperoncini, and sundried tomatoes start everything off. Toasted arborio rice, good wine, and broth + patience. Once the risotto is creamy and perfect, I finished with pesto, lemon, and grana padano. So creamy and so flavourful.

Giraffes Set To Receive ESA Protections

After a grueling seven year process that saw lawsuits, ferocious activism, and continued pressure on the USFWS, 4 species of giraffe are set to receive Endangered Species Act Protections. There are fewer than 70, 000 adult giraffes remaining as habitat loss, illegal poaching, and trophy hunting continue to decimate the population. Every single peril giraffes face can be traced back to humans and it's our responsibility to address these challenges head on.

Grilled Garlic Bread Pesto Chik'n Sammies

All of my favourite things coming together for the perfect handheld. Crispy, toasted sourdough bread rubbed down with garlic, fresh, gorgeously green pesto that I tossed spinach in to make it extra green and vibrant, spicy pickled peppers, my fave plant-based chik'n filets, and dreamy burrata.

Y'all know I'm obsessed with anything having to do with pesto, so I'm always trying to concoct new ideas so that I can continue eating pesto as often as possible lol The spinach addition made the pesto so rich and vibrant, and while you could pick up on it when tasting, the basil and cheese were the prominent flavours.

Black Bean Burger Brekkie Sams

Introducing my new Black Bean Burger Breakfast Sammies! To be honest, I was originally planning to use plant-based sausage rounds, but they were completely sold out at the market. I shifted gears and snatched a box of Gardein Supreme Black Bean Burgers and thought hey, this might work lol plus, it gave me an opportunity to try out another of their products.

The sammie was legitimately perfection. The flavour from the black bean patty gave the sammie some extra oomph along with the crispy hashbrown, perfectly fried, yolky eggs, crisp lettuce, melty cheddar, and my favourite green salsa. Get on over to the RECIPES page <3

Fully Loaded Hashbrowns

Hey, this isn't exactly revolutionary or anything, but it's certainly fun and delicious you guys! Crispy, frozen hashbrowns are legit one of my fave things. A little ketchup on one side and chipotle mayo on the other and I can go to town lol

I believe I saw something similar as I scrolled through Instagram reels and thought yah, I could definitely do something like that. What's not to love? You've got your crispy, golden brown hashbrown patties topped off with melty cheddar, spicy jalapeno, salsa, sour cream, red and green onions, and diced tomatoes.

The browns stay nice and crisp with all of those delicious toppings. I only tested the recipe for 6 hashbrowns so I didn't over eat lol but it's very easy to make as many as you'd like. Simply increase your topping prep and you're good to go. Head to the RECIPES page.

Sloppy Joes are such a nostalgic dish for me. Growing up, we definitely had sloppy joe night and I just loved those messy little buggers. I had a lot of success with the Sprague Cannery Plant-Based 3 Bean Chili so I was really excited to try the sloppy joe mix. The sliders were blanketed in melty Monterey Jack, jalapenos, and red and green onions. So snackable and fun you guys!

Stuffed Peppers with Black Lentils

As soon as the weather starts cooling off, I'm immediately in like, baked, cheesy, stuffed veggies, casserole mode lol. I want all the comfy, baked and delicious eats, and stuffed peps are definitely one of my favourite things.

The filling is super simple you guys. Some onion and garlic, pepper flakes for heat, cooked brown rice, browned and seasoned Impossible foods beef, and black lentils which crank up the protein factor. I finished with heaps of cheese to keep everything nice and tight.

Once the peppers were stuffed, some more cheese and some patience as they bake up. They come out so ridiculously tender with the most enticing blistering around the edges. They're delicious, super easy to put together, and available now under the RECIPES tab.

Spicy Sausage & Pesto Baguettes

All day, every day pesto lol that's my motto. I absolutely love my fresh pesto and I'm always looking for delicious ways to use it up. Introducing my Spicy Sausage & Pesto Baguettes!

These baguettes couldn't be easier to put together and that fresh pesto really makes them special. After frying up your Beyond Meat Hot Italian sausages, I grilled a baguette until crispy, assembled under some pizza mozz, and broiled until melty. 

​I finished the sammies with some garlic to infuse in to the baguettes along with more pesto, pickled hot peppers, sliced onions, and fresh spinach. These handhelds are delish you guys! Head on over to the RECIPES page.

Cheesy Jalapeno Ranch Smashed Taters

This tray of gorgeous taters will not be safe around you and your family because they are so ridiculously delicious and snackable. First of all, smashed potatoes are where it's at! Crispy, golden brown tater goodness. We're kicking it up a notch with some Ranch inspired toppings.

After the taters are golden and crisp, I topped them off with mozz, sliced jalapenos, and diced red onions and returned them to the oven until melty. I finished the tray with a drizzle of good Ranch dressing, some fresh dill and scallion, and finely shredded grana padano. 

The taters retained some crisp and all of the toppings really made them delicious. The melty cheese, the zippy onions, heat from jalapenos, and tangy dill, they're addictive. Head to the RECIPES page.
