Creamy Boursin, Potato & Leek Soup

Would you guys believe this was my first time trying Boursin cheese? Isn't that ridiculous? I just think I never really gave it a second thought, not so much that I didn't want to try it. I actually snatched some specifically for this soup idea and it really provided a creamy tang to the soup that was just delish.

This soup really couldn't be easier and focuses on those gorgeous taters as the star of the show. Super simple broth, some buttery, silky leeks, supporting veg, and about half an hour to cook. Finished with cream and the shallot & garlic Boursin for that rich, tangy, cheesy vibe at the end. So lush.

Spinach & Feta Baguette Boat

​After testing out my Breakfast Baguette Boat recipe a while back, I knew I wanted to make it again with a different combo of fillings. This time, i went with a spinach and feta version which was so delish you guys, and couldn't be easier.

I hollowed out a standard, store-bought baguette and got it on a baking sheet. Then, it's as simple as whisking together some eggs, cream, veg, mozz, spinach & feta, and pouring / pressing that inside the baguette.

Once stuffed, we bake for 30 minutes until set and that's that. I cut it into 4 pieces and gobbled them right up, saving two for work meals. Such an easy recipe and one that can be adapted in so many different ways depending on what's in your fridge. Head to the RECIPES page.

Skillet Shep's Pie with Broccoli Cheddar Mash

Y'all, this one is a winner. I was really craving a hearty shep's pie, so I decided to whip up a skillet version and topped it with my broccoli cheddar mash recipe. My gosh, so comforting, so cozy, so flavourful, so delish.

Once I had the shep's pie filling ready, I whipped up my mashed taters. I love this mashed tater recipe. You get little pops of cheddar and gorgeous broccoli in every bite. So yum. I slathered the mash on top of the skillet and baked until bubbly and golden.

I just used packaged gravy for this one. Once that was rich and thick, I smothered my serving in gravy and tucked in. So cozy and so freaking delicious. It was even better the next day as leftovers. Make this. Trust Me. Head to the RECIPES page.

Banana Crumble Muffins

After doing some baking for Food Social's Fall baking Event, I realized I kind of enjoyed doing it. Will I ever be a "baker"? Probably not, but it inspired me to want to create some new goodies which I thought was super fun.

These muffins are a bit of a riff on my recent Ma's Maple Pecan banana Bread recipe. I followed the recipe fairly similarly with just a few tweaks. Once the batter was ready, into muffin tins it went. I made a crumb topping with some flour, butter, sweeteners, cinnamon, and pecans, and topped each muffin with that.

They baked for less than 15 minutes and were so fragrant and golden. The crumb topping had a nice crunch and sweetness which was so lovely to crack into when taking a bite. These muffins are addictively good and so easy to make, trust me, I did it lol Head to the RECIPES page.

Spicy Bean & Barley Vegetable Soup

Soup season is in full swing y'all, so I've been writing down a bunch of new soup ideas to get us all through the winter. Let's dive into my new Spicy Bean & Barley Vegetable Soup.

Barley is one of my fave grains. It's so plump and texturally pleasing. I started the soup with some aromatics and Thai chilis which definitely  bring the heat. Some supporting veg, good broth, tomato paste, and water. Once boiled, I added the barley, beans, seasonings, and simmered for 45 minutes or so.

Then, I folded in some gorgeous greenery from spinach and parsley as well as grana padano and lemon. The resulting soup is of flavour, a tantalizing tingle with every bite, and hearty beans & barley. So delish. Head to the RECIPES page.

Creamy Broccoli Cheddar Bucatini

We're all already aware that broccoli and cheddar are kind of the perfect duo. I've done a million different broccoli cheddar combinations, all of which hit the spot because they're just so perfect together. That's what prompted me to give the broccoli cheddar treatment to some perfectly cooked bucatini pasta.

The sauce couldn't be easier you guys. Garlic, onion, butter & EVOO, cream, wine, broccoli, and cheese. The entire recipe is ready in under 40 minutes from prep to plate. What you get is this luscious cheese sauce, perfectly cooked bucatini, and broccoli florets speckled throughout the dish.

Gorgeous Baked Onions

I know I've mentioned this before, but I'm incredibly prone to buying things without taking inventory at my house. So there I was, two bags of onions and no plan. I decided to try baking them as a bit of a side dish. 

I nestled the onions into broth and topped them with butter, herbs, and simple seasonings. I dropped Thai chilis and garlic around the dish, covered, and baked for a while. Then, I uncovered and let them finish until gorgeously golden. The recipe took a long time, so I believe I'll retest it at a higher temp to see if I can speed things up, but they turned out deliciously regardless.

Pecan Pesto Garlic Bread

Pesto & Garlic Bread are kind of a match made in heaven. Garlicky, green goodness in every bite. Addictive, easy to make, and perfectly paired with your delicious pasta dinner or simply for a snack.

I made a batch of gorgeous pesto featuring Lark Ellen sprouted pecans that was so rich and creamy. Honestly, so delicious you guys. Then, preparing the garlic bread couldn't have been easier. I grilled some baguette until golden, slathered them in pesto, topped with mozz, and baked until melty and delish.

Meatball & Red Pesto Rolls

Quick, easy, and always so satisfying; y'all need to make these Meatball & Red Pesto Rolls. Melty cheese, savoury meatballs, vibrant & flavourful red pesto, the whole shebang.

I whipped up a batch of my fave meatballs and baked those off. Then, I split open some fluffy rolls and slathered them in prepared sundried tomato pesto. Once the meatballs were finished, I stuffed them inside the rolls, followed by a slice of pizza mozzarella and finished them off in the oven until melty.

Some basil and grana padano to finish and that's that. So quick, minimal effort, and so freaking delicious. Y'all already know I love these darned meatballs, they're addictively good. Get on over to the RECIPES page.

Fiery Garlic Green Beans

Give those basic green beans some pizazz with my new Fiery Garlic Green Beans. A skillet full of fiery beans loaded with garlic, butter, and lemon. They definitely pack a nice, spicy touch and are addictively delish and so easy to make.

After cooking some Thai chilis, I added the beans and let them cook for 10ish minutes, flipping every couple. I added some water and covered them for a few minutes until they were almost perfectly tender-crisp. Then, some glorious butter and heaps of garlic. 

​I finished the skillet with a squeeze of lemon and some grana padano & lemon zest. Serve them up with some additional lemon wedges and voila! Spicy, flavourful, addictive green beans that come together in no time. Head to the RECIPES page.
