The skin is where it's at!

There are so many conflicting stories about the skin on fruits and vegetables and whether we should be peeling or eating them. Here's a few quick notes about why skin is totally in!

**With most fruits and vegetables that contain edible skin, a large portion of the vegetable / fruit's nutrients and vitamins are in / under the skin. For example, cucumber skins contain nearly all the fiber the cucumber provides!

Mind you, almost any fruit or veg with edible skin (unless Organic) contains pesticides. Scrub all your fruits and vegetables prior to eating them to reduce the amount of pesticides consumed.

In the case of vegetables that grow under the ground, it is still extremely important to scrub them thoroughly before considering eating their outer skin. Think potatoes, so many nutrients hide in the skin and surprisingly, it is discarded often. Keep that skin for extra texture and flavour to your dish!

Dried vs Canned Beans

When is the best time to use canned versus dried beans?

When it comes to using the slow cooker, dried beans are the way to go. They require a longer cooking time and benefit from a low and slow cook. Texturally, they retain their shape and bite even after being cooked for hours.
Don't be turned off from using them if you're whipping up a quick meal, you will simply have to take the time to prepare them prior to making your dish.

Canned beans are perfect for a dish you are whipping up quickly. Stove top soups, sauces, and stews are the perfect time for canned beans.

Canned beans are simply cooked and packed in a salty water. When using them, remember to drain and rinse to remove starch / salt. If you want to thicken a soup perhaps, drain the beans but leave them unrinsed.

Keep in mind, the longer canned beans cook, the mushier they will get. Quick cooking is best for canned beans!
