What is a ricer?

Generally speaking, a ricer is used to press whole foods through the press essentially pureeing them. It's called a ricer because the food that comes out resembles the size and shape of rice because of the slots in the press where the food is pressed through. It looks an awful lot like an oversized garlic press.

It has a variety of uses in the kitchen but most notably it is used on potatoes. Riced potatoes are pressed to achieve a creamy, lump free texture. It is used in the making of Gnocci which is a potato dough. It can also be used to press liquid out of veggies or make baby food by pressing through cooked vegetables.

Using the ricer will come down to your preference. If a chunky, hearty mash is what you are looking for, simply grab the potato masher and go to town. If you're a creamy, rich mash kind of person, a ricer is the best way to achieve that texture.
