WHAT YOU NEED

  • 540g Lentils, drained & rinsed
  • 12 Sesame Slider Buns
  • 6 Square Slices Extra Old Cheddar
  • 1 Green Onion, sliced thin
  • 2 Tbsp. EVOO
  • 1 Tbsp. Unsalted Butter
  • 1 Yellow Onion, diced
  • 2 stalks Celery, diced
  • 1 Bell Pepper, diced
  • 1 Jalapeno Pepper, seeded & diced
  • 2 cloves Garlic, crushed & minced
  • 1 Tbsp. Tomato Paste
  • 3 Tsp. Worcestershire Sauce
  • 1/2 Tbsp. Yellow Mustard
  • 1 Tbsp. Ketchup
  • 1/4 C PC Plant-Based Chicken Broth
  • 1 Tsp. Corn Starch
  • 1 Tsp. Garlic Powder, Onion Powder, Chili Powder
  • 1/2 Tsp. Red pepper Flakes
  • 1/2 Tsp. Cumin
  • 1/2 Tbsp. Brown Sugar
  • Few Dashes Hot Sauce
  • Sea Salt

DIRECTIONS

  • Begin heating the EVOO, garlic, and pepper flakes, in a skillet set to about medium heat. Once heated, let the garlic sizzle for 30 seconds before adding the jalapeno, onion, celery, bell pepper, and a good pinch of salt. Stir and cook 5 minutes. Add the cumin, garlic powder, onion powder, and chili powder, stir, and continue to cook another 2 minutes. Stir in the lentils and once they come to temperature, let them continue to cook for another minute or so.
  • Add the tomato paste & worc sauce along with a few dashes of hot sauce, ketchup, mustard, and brown sugar, and a good pinch of salt. Stir and continue to cook another 2 minutes. ​
  • Whisk together the chicken stock and corn starch in a small glass until combined. Pour this in to the lentil mix, cover, and cook another 4 - 5 minutes. Remove cover, mash half of the lentils, and continue to cook uncovered until liquid is reduced. Taste and adjust salt to your liking.
  • Preheat oven to 350 F
  • Place the bottoms of the slider buns in a 9"x13" baking dish. Spoon the lentil filling on to each slider until filling has been entirely used up. Top the sliders with the sliced cheddar and sprinkle the green onions over the cheddar. Place the tops on the cheese before melting the tbsp. of butter in the microwave & brushing the top buns with the butter & sprinkling them with sea salt.
  • Bake uncovered for 10 - 12 minutes until cheese is melted and buns have a nice crisp.
  • Use a knife if needed to slice around the sliders making them easier to pull out.
  • Serve & ENJOY!
