Green Salsa Enchiladas - Bean and Cheese

This recipe is quite simple and EXTREMELY ENJOYABLE! If you are a person who is picky with textures, I suggest garnishing with raw, diced red onion as well as green to give a little crunch.

These enchiladas are not only loaded with beans and cheese but they are smothered with a tangy, green salsa and baked to perfection.

Serve them with some Cilantro Lime Slaw perhaps?

This recipe is great because you can adjust almost all of the flavours to your own liking and it will still taste wonderful! You can use red or green cabbage or even both for a more colorful slaw.

Cream of Celery Soup

This soup is very mild in flavour and works great as a base soup for other recipes or can be enjoyed alone with salad and bread sticks for a great lunch as well. Chives add just the right amount of flavour and crisp atop this soup that manages to be both chunky and creamy. ENJOY!

Layered Bean Dip

Every time I have made this it's been a hit! Canned refried beans are kicked up a notch with onion, jalapeno, and tomatoes and layered with guacamole and cheese to deliver a seriously creamy, rich and cheesy dip.

*I have provided the link for my guacamole recipe below. You can use store bought or your own recipe for guacamole as well!

Spinach and Ricotta Lasagne Rollups

This recipe was created solely through inspiration from my mother. Her rollups were phenomenal and they were something my siblings and I looked forward to every time she made them.These rollups pair well with any tomato sauce however I used my Roasted Red Pepper sauce. (LINK BELOW)
