My New Fave PB Cookie Recipe

You guys might not know this about me because I really don't do a lot of sweet recipes, but I absolutely LOVE sweets. I'm really partial to cakes; cheesecakes, carrot cakes, red velvet, ugh, cake is by far my fave dessert but cookies are probably a close second or third. How can you deny the allure of freshly baked cookies in any variety? 

A few weeks back, I was sick with covid and couldn't leave my house when the urge for sweets overcame me. I was pretty desperate as I had absolutely nothing in my house that would fix this issue when I remembered that I had peanut butter. One of my oldest and dearest friends, peanut butter is 100% my fave nut butter, as basic as that may be. I can still take a spoon to the jar if the situation calls for it. I'm trailing here. 

I knew a batch of warm, freshly baked PB cookies would do the trick. While I've used the recipe  on the back of the jar before, it's pretty underwhelming and if I was going to do this, I needed a good recipe. So, I searched and peeped a few different recipes until I decided on this one from Cooking Classy. The recipe is linked below :)

Everything about these cookies were literal perfectsch. They were warm, gooey, and perfectly cooked, just as the recipe said they would be despite my initial reaction when I took them out of the oven. They definitely looked under baked, but the recipe also suggested that's how they would look and they were right.

For the second batch, I folded in the rest of a bag of Reese's peanut butter chips. It was overkill, they didn't need them so I'd recommend just following the recipe as is.
