Summer Superfoods to Stack Up On

I always read these articles because I like to see how many of these superfoods I consume quite regularly. One might think it's difficult to eat so many things but there are great ways to incorporate a variety of superfoods into your everyday diets. I'm going to share with you a few of the superfoods mentioned in this article that I enjoy regularly and the ways that I enjoy them. You'll see there are plenty of options when it comes to getting more good for you, antioxidant and nutrient rich superfoods.

SPINACH

I eat spinach every day in one way or another. Full of iron, fiber, vitamins and minerals, spinach is a superfood you can easily eat more of. Swap your sandwich / burger lettuce for darker, healthier greens like spinach. Use it in pastas and sauces, blend it into smoothies, or enjoy it in salads. Eating spinach is so simple and so great for you and your body so try incorporating it and other dark, leafy greens as often as possible.

BLUEBERRIES

Blueberries are absolutely delicious so finding ways to eat more of them is quite easy. Blueberries are loaded with antioxidants that are great for the skin and are low glycemic meaning they provide a lot of vitamins without the extremely high sugars. They're delicious on their own but they can be used in a variety of sweet and savoury dishes. Breakfasts like oatmeal, yogurt, and pancakes, all benefit from the addition of blueberries. They're delicious when blended into smoothies or used in salads as well paired with some spinach and feta cheese. 
LEMONS

Lemons can literally be incorporated into your daily routine so very easily. A squeeze in your morning tea, a few slices in your water, in a vinaigrette, or squeezed over a finished dish, lemons are a versatile superfood. Lemons work to remove free radicals from your system as well as being generous in the vitamin c department. Vitamin c is great for your immune & digestive systems.

CUCUMBERS

Cucumbers are often overlooked in the nutrition department but they're not called superfoods for nothing. They're excellent for hydration in the summer heat as they're almost 95% water. They're great as a snack, delicious with dips like hummus or spinach dip, and fabulous in so many different salads. They also happen to be a fabulous addition to fresh juices. Let's give cucumbers the exposure they deserve!

AVOCADO

I enjoy avocados as often as I can because not only are they delicious, they're nutritional powerhouses. Avocados can easily find their way into every meal of your day. They're delicious on toast with salt, pepper, and pepper flakes in the morning. They're delicious as a mayo substitute on sandwiches or in salads for lunch, and fabulous as a garnish on burgers for dinner. Don't forget smoothies love avocados and so do desserts. You can and should be eating avos often!
