Celery - Wonder Vegetable !

I absolutely love celery and I always have. As a child growing up it was one two vegetables I could eat raw without dipping in a dressing of sorts I had always heard stories of it being a negative calorie (meaning chewing burned more calories than consuming per serving) and rich with vitamins but never really understood.

Now, as a lover of vegetables and their nutritional benefits I decided to troll the internet for some of the best PRO's about enjoying celery as often as possible.

  1. Celery contains high amounts of Vitamin's A and K. A being responsible for protecting and preventing age related degeneration of the eyes. K is responsible for clotting blod and preventing uncontrolled bleeding. 
  2. Raw, whole celery helps to reduce stress through the mineral magnesium and boosts blood circulation reducing high blood pressure.
  3. Some vegetables vitamin content diminishes or increases based on eating raw vs eating cooked, not celery ! Steamed celery retains 99% of its vitamins and minerals 
  4. Low in calories ! Not many snacks can claim to be both nutritionally beneficial AND low iin calories.

So there you have it, enjoy it raw as a snack, use it in your mirepoix for your soups and stews, and toss it in your salads because this vegetable is worth it's weight in vitamins and minerals :D
