Cacao and Cocoa come from the same bean and start off exactly the same. The only difference between the two is the process to prepare them. Cacao is as pure as it gets and receives little to no processing retaining all of its antioxidants and minerals. Cocoa on the other hand is heated prior to packaging. Surprisingly, cocoa retains much of its antioxidants as well and is still extremely beneficial to our bodies.
