Salad Fresh Panzanella

I love Panzanella salad. It's such an economical salad in that you are able to salvage bread that you'd likely throw out otherwise. In this case I used half a loaf of Sesame Egg bread but your options are pretty unlimited as far as what bread you use. Whatever crusty bread you have on hand will work perfectly as long as it's a bit stale and dry.

What's a little different is the addition of fresh spring mix lettuce. I felt like adding the lettuce would help freshen up the salad both visually and when eaten. It really added a little colour & freshness to the salad.

One thing that is important when preparing bread salads especially in this case where we've added fresh lettuce is that it is best eaten immediately upon dressing. The bread will soak up a lot of the dressing which initially is good but after sitting in the fridge overnight the salad tends to be quite dry. Also, the delicate lettuce will be awfully soggy if left overnight so try and enjoy the salad quickly.

Chili Spiced Potatoes in a Roasted Scallion & Sweet Pepper Vinaigrette

I consider this my new favourite way to eat potatoes. Roasted potatoes are one of my favourite things to eat so I'm always looking for new ways to enjoy them.

I've roasted some delicious sweet peppers and scallions until withered and blended them together with a little vinegar and olive oil to create a delicious, roasted vegetable vinaigrette. Tossing the crispy, roasted taters in the veggie vinaigrette was the perfect way to infuse them with a whole lot of additional flavour. I'm looking forward to trying out different roasted veg vinaigrette's in the future.

Chili Roasted Potatoes in a roasted Scallion & Sweet Pepper Vinaigrette

Roasted vegetables make a fabulous vinaigrette! In this case Scallions and Sweet Peppers are roasted and blended into a delicious vinaigrette that I've tossed some gorgeous Chili flavoured roasted potatoes in. This dish is so flavourful and fabulous!

Gorgeous Roasted Veggies

There's something so inviting about a tray of colourful roasted vegetables. I've got an assortment of beautiful vegetables roasted to perfection and tossed with fresh parsley. Simple, delicious, and only one baking sheet needed for this fabulous side.

Salad Fresh Panzanella

This version of the classic bread salad includes bocconcini cheese, fresh roma tomatoes, and shallots along with fresh spring mix lettuce to freshen the whole salad up. The salad is tossed in a simple red wine vinaigrette that is incredibly simple and tasty. What better way to re purpose stale, crusty bread than to make a fresh and delicious salad.

Roasted Tomato & Sweet Pepper Potato Tarts

This recipe actually started as an experiment. I was pleasantly surprised at how delicious these "tarts" turned out. Everything from the sweet and delicious filling to the shell made of chipped potatoes was spot on. I will definitely be using chipped potatoes to make tart shells again in the future!

Eggplant Rollups

I've only recently started enjoying eggplant more frequently. I'm a very big texture person and eggplant has a tendency to lack texture all together. With that being said, I've recently started finding new ways to enjoy it so when I was turned on to this idea I knew I had to try it out.

A creamy ricotta filling rolled up in roasted eggplant slices and baked in a delicious sauce, absolutely wonderful. What I especially love is how all of the flavours really play up one another. It's literally the perfect dish!

All of these peppers fall in the middle to low of the Scoville Chart so I'll be avoiding the burn this time around but I'm looking forward to giving these a taste!

Cheesy Shells with Roasted Brussel Sprouts

What's not to love about cheesy pasta? Creamy & luscious cheese sauce and tender noodles, it's a match made in heaven. I've taken a more grown up approach to it by roasting some gorgeous brussel sprouts and folding them into the cheesy pasta. Bake this all under a layer of toasted crumbs and we've got something magical.

The bitterness of the charred sprouts works so well in the rich and cheesy sauce. It's truly a flavour combination that makes the taste buds sing.
