This one goes out to everyone who thinks giving up meat means missing out on your favourite foods. These meatball sliders are heavenly; from the blanket of melty mozz to the garlicky, cheesy toasted buns. Everything is simply divine and perfect for a meatless meal the whole fam will love tucking in to.

Tender Impossible Beef meatballs baked until juicy and perfect, nestled on to brioche slider buns and dredged in tomato sauce and a blanket of mozzarella. Topped and brushed with a cheesy, herby olive oil mixture that lets those buns really toast up beautifully in the oven.

Ok y'all, this one's a winner. First up, my super simple mac and cheese recipe featuring a combination of mozz, monterey jack, and red leicester cheeses. This beauty is then baked to bubbly golden perfection. Next, my absolute favourite plant-based chik'n bites from SOL cuisine, tossed in a super easy buffalo sauce until thoroughly coated. Now it's time for assembly :)

We've got all the toppings here! Red and green onion, store bought chipotle mayo, sour cream, avocado, and our saucy chik'n bites. Everything together is magic in your mouth. I can confirm this as I consumed two servings to myself and it was truly magical.

I'm fairly certain this was a Tik Tok trend, but I don't have Tik Tok, so I probably saw it on Instagram or something. Anyhow, what a fun idea and what a beautiful dish to present. So much more fun than just saucing and tossing some noods on a plate.

Al dente rigatoni tossed in grana padano, basil, and salt, arranged upright in a springform pan until nice and cozy. Smothered in tomato sauce, ricotta cheese, more tomato sauce, and a finishing blanket of mozzarella and additional grana padano. Sliced and served up with fresh parsley and additional grana padano because there's really never too much hard cheese.

Believe it or not, this was a beautiful mistake. It all started with a plan to make manicotti and off to the grocery store I went. As I made my way down the pasta aisle, I realized the ONLY two pasta varieties they were sold out of were manicotti and my backup plan, cannelloni. After standing there blankly for what felt like an eternity, I rebounded and snatched up lasagna noods. Besides, it's actually easier to make a lasagna than to individually stuff each manicotti anyways, so this is a win for all of us.

We've got a dreamy ricotta & cottage cheese filling that includes melty mozzarella and grana padano cheese. A roasted pepper sauce that kicks things up a notch with chili oil and pepper flakes helping to cut through the rich, cheesyness of it all. Plus, we're sautéing up an entire bunch of green kale for some much needed green goodness wedged into every layer of this glorious lasagna.

Cabbage soup emerges every fall / winter, ready to fill us with the good stuff and remind us all why cabbage is so underrated. There's nothing like a hearty bowl of cabbage soup to me, it has it all. There are plenty of variations of cabbage soup available to us but today, I'm serving up a smoky version that takes advantage of the smoky, deep flavour of smoked paprika.

We've got all the fixin's here; tender cabbage, creamy beans, smooth, tender cubes of taters, and a smoky broth infused with white wine, Italian seasonings, and our feature ingredient - smoked pap. The smokiness plays really well with the tomato and gives us this delicious broth for everything to come together in.

We all have a recipe for banana bread at this point, so why would any of you care about this particular loaf? Well, it was my mother's recipe so it's a treasured hand me down for starters. Second, it's so simple and actually uses enough bananas in the recipe. I find myself looking at other recipes calling for one or two ripe bananas and thinking, this isn't banana bread. This is bread with banana flavour.

Anyhow, I made some swaps and added in some leftover bags of dark chocolate chunks, peanut butter chips, and walnuts. You don't have to but peep your pantry for open bags. Banana bread is perfect for dumping in whatever little add ons you might have lying around.
