Chickpea Salad

When I first caught wind of this idea I was so excited. Back in my MED (Meat Eating Days), I loved mayonnaise based salad sandwiches. The creaminess of the dressing, the crispy freshness of the celery, and the toastiness of the bread all made one delicious sandwich.

Chickpeas take center stage here in place of the traditional chicken / egg / tuna/ and the results are wonderful!

Everything I loved about this style of sandwich when I was young I still love now. The dressing was nice and creamy and every bite I had of the sandwich was a textural playground! Crispy toast, crunchy celery, and creamy dressing holding everything together to make every bite better than the last. Delicious.

I tried it the following day on a sub roll with lettuce and tomato and it was even better. The roll held everything together perfectly so make enough that you can try it both ways :)

Fiesta Veggie Soup

I absolutely loved the flavours in this soup. Every sip of broth was just a touch better than the last. Plenty of delicious vegetables joining this Fiesta of flavour including fresh zucchini, bell pepper, and tomatoes.

Want to kick it up a notch? I only used a touch of hot sauce but if you can handle the heat, try adding a few more dashes. I love the combination of tomatoes and spice, the two work so well together and really pop in your mouth.

As always, consider who you are serving when determining how much spice to add.

Whenever I cook for myself I can pile on the spice but I wouldn't want to do that when serving the same dish to my nephews. Keep everyone's tolerance levels in mind :)

1. First up will be my Fiesta Veggie Soup. What makes this soup deserve a name like "Fiesta" ? You'll get pops of lime flavour with just the right amount of spice with every bite. The broth is fantastic and there's lots of bright, colourful veggies in this soup. It's delicious with some chunks of Avocado on top!



2. Back when I was a meat eater, I loved creamy, mayonnaise based sandwiches. Think Chicken Salad, Egg Salad, Tuna Salad, you get the idea. I was on Facebook when I saw someone share this idea and I ran with it. Chickpea Salad Sandwiches are SO DELICIOUS and texturally speaking, they deliver. I loved slicing open a crusty roll and stuffing it with this creamy salad. It was also delicious on its own but it really brought me back when I devoured it on a bun! You guys will love it!



3. I'll be finishing up the week with my Ricotta Stuffed Baby Potatoes. When you stuff something, it is expected that it will delicious and these don't disappoint. Hollowed out baby potatoes stuffed with a creamy ricotta mixture and baked under a layer of velvety sauce, melty cheese, and crispy bread crumbs. I can't tell you enough how amazing these were!

Scallion Soup with Roasted Potatoes

I am so proud of this soup. The idea sort of popped in to my head at the market when I was picking up fresh vegetables. I wasn't sure how I was going to assemble it but it all worked out!

The broth is SO FLAVOURFUL! Nice and oniony with notes of pepper in the background. It's absolutely delicious.

Roasting the potatoes separately keeps them nice and crisp in the soup and the flavours really pop together.

Breaded Raviolis

I actually had the pleasure of sharing these with my sister and brother in law when they had visited and my sister just loved them. We ate the entire batch between the two of us really. Nice and crispy on the outside and warm and delicious on the inside.

This is quite possibly the easiest appetizer ever. Quickly bread up the raviolis and they're done in the oven in 10 minutes or less. They are so delicious and I decided to serve them with a tomato sauce / ricotta mix but any marinara or pasta sauce would work as well!
