Creamy Tortellini Chowder

I'm literally obsessed with this soup. I had two bowls the first night, and finished the rest of it off the following day at work. It's delicious and so creamy despite only having 1/3 c of cream in the entire batch.

We've got tender potatoes, perfectly cooked cheese tortellini pasta, a rich and delicious broth, and some fresh parsley & grana padano to round everything out.

Potato Pancake Poutine Stacks

These were actually inspired by a local restaurant I enjoy brunching at, STACKS. I saw their version and I knew it was something I needed to recreate at home because c'mon, poutine + potato pancakes? How can that be wrong?

First, we've got gloriously crispy potato & zucchini pancakes. Then, we're jazzing up a few packets of vegetarian gravy with some sautéed cremini mushrooms and thyme and the stacking begins. I served up 3 patties with cheese curds in between each layer and smothered them in that luscious, mushroomy brown gravy. Topped with chives because a little green is always a good thing, and these pancakes are the perfect weekend brunch vibe.

Tradish Lasagna

We were more of a stuffed shells / lasagna rollups kind of house growing up, but when the lasagna did come out to play, this is exactly how I remember it. Super simple and super delicious.

We've got an easy ricotta filling, a meaty bolognese style sauce, and tender, fresh lasagna sheets. The lasagna is quite easy to put together and absolutely delicious. Finished off with some fresh greens and additional grana padano, it's so good and so nostalgic for me.

Cheddar & Pepperoncini Roasted Brussel Sprouts

Spicy, cheesy, and addictive...those are the words I'd use to describe these magical brussel sprouts. I can't tell you how much I regret the many years I was convinced I hated brussel sprouts, what a waste of years I could have been eating banging brussel sprouts.

Anyways, we're roasting some beautiful brussel sprouts tossed in lemon, spicy pepperoncini, garlic, and grana padano. Once they're nice and tender, we're finishing with a sprinkling of extra old cheddar which not only melts on the sprouts, but gets nice and crispy on the tray. The sprouts are tender, spicy, and every bite with some of that crispy cheddar is to die for.

Jane Goodall Act to be Reintroduced in Canada

The Jane Goodall Act is set to be reintroduced in Canada after fizzling out due to the election in 2020. The Act will extend necessary protections to animals like tigers, elephants, and apes and would ban the import of ivory from elephants and rhinos. The Act must pass! Asparagus, Green Onion & Feta Quiche

If you're looking for something easy and delicious for Sunday breakfast / brunch, look no further than my Asparagus, Green Onion, and Feta quiche!

As the name suggests, it's got tender pieces of asparagus, fresh green onions, and tangy, salty feta crumbled throughout. It's incredibly easy to put together thanks to a frozen, store bought crust but make sure when you buy your crusts that they are all vegetable shortening based. Typically, they would contain lard so you'll have to look for the vegetable ones. 

I'll eventually get around to perfecting a crust recipe but honestly, for as often as I eat quiche, I'm good with the cheaters route for now :P Head to the RECIPES page.

Cheesy Skillet potatoes

Three cheers for Friday's and four cheers for potatoes, am I right? We're whipping up some cheesy, fun potatoes today, and this recipe couldn't be simpler. It starts with some boiled, tender yellow potatoes, tossed in a seasoned butter and topped with melty cheddar, fresh herbs, crumbled feta cheese, and additional garnishes at the end.

These should be called party potatoes, but I feel like I'm stealing that name from someone so we won't call them that. They are however, a party if you ask me.

Sundried Tomato & Ricotta Stuffed Shells with Creamy White Wine Sauce

This stuffed shell skillet is basically life guys; so utterly creamy and garlicky and delicious, ugh, just pure magic in your mouth.

We're starting off with a creamy ricotta filling that includes sundried tomatoes which help cut through some of that creamy richness. Then, we're stuffing our jumbo pasta shells with our delicious filling and whipping up a gloriously smooth and creamy white wine sauce to nestle our gorgeous little shells in.

We're smothering the skillet in pizza mozz, baking until bubbly and golden, and devouring. It's a pretty easy recipe to whip up and as I said, absolutely delicious. Head to the RECIPES page.
