When I hear "Italian Food" my mind gravitates towards pastas with rich, robust, tomato sauces and freshly prepared pizza crisped up in a wood burning oven. There are so many delicious, vegetarian dishes within the Italian culture.
Appetizers and starters are where I'm focused so I'm going to explore the internet for some Italian Inspiration and share my delicious results. I've already got something in mind I think will be a real hit! Check out the new Meat free Monday meals for inspirations for your own Monday Meals without the Meat :D

Allow it to inspire you to try my version but also to play with flavours and whip up your own, unique Guacamole. For service, get creative ! If you're serving to a large group using a bowl of guac on a plate surrounded by chips is great. If it's only a small group try serving individual cups of guacamole using the skins of the avocado ! See below for the idea, it's a nice way to jazz up an otherwise simple menu item.
Mexican inspired flavours are my favourite. From the spiciness of the jalapenos and chiles to the abundance of fresh salsas, I love it! Any excuse to try a Mexican dish is a good enough excuse for me. Check out my recipe for Black Bean Rollups under the RECIPES tab.
My recipe is a bit different than the original with the addition of lime,green onion,jalapenos, and the creation of a very simple sour cream dip. Enjoy these today as a main course or as an appetizer by cutting them in half to serve. Mexican inspired flavours are a favourite of mine. I love spice, avocados, fresh salsas etc As a matter of fact, if I had to choose only 1 food to live on for the rest of my life I would definitely choose Mexican :)
There are so many fresh, fun, and delicious vegetarian recipes out there for all of you Mexi lovers ! Jalapenos, Onion, Scallions, Tomatoes, and lime all are common in guac recipes. Stay tuned for my stop in Mexico ! I truly believe one day I will travel the world and I'm determined to do so. Aside from experiencing the culture and seeing the sights, it's about the food. Trying new foods is so exciting and inspiring! In the spirit of traveling I am going to look for some of the tastiest appetizers and salads from across the globe and try them out sharing them with you !
