Cheesy Cauliflower Steaks

Make your cauliflower the star of your plate with these easy peasy, cheesy cauli steaks. They're ridiculously tender, flavourful, and smothered in melty cheese.

Quite simply, we're dressing our cauli in a seasoned oil and baking it until it is tender and delicious. To ensure the stem / core portion is cooked, I stab it with a knife several times, much like you would a potato. This ensures your stem is just as tender as the actual cauli itself. 

Once tender, we're burying our steaks in a combo of pizza mozz & old cheddar, and finishing in the oven until melty and glorious.

Pesto Fusilli Lunghi

Every time I passed these noodles at the grocery store, I've told myself I wanted to smother them in pesto. So, I finally picked them up and did just that!

Fresh pesto is where it's at for this recipe. You can also use prepared pesto, but the colour is much more vibrant when the pesto is fresh. I went with toasted pine nuts for this pesto which adds a delicious, roasty, nutty flavour to the pesto. Then, our gorgeous fusilli lunghi is tossed with our gorgeous pesto & pasta water until creamy and wonderful.

I finished it with some gorgeous arugula microgreens, basil, and grana padano. The microgreens add a pop of freshness and that gorgeous green colour. Head to the RECIPES page.

Lolita the Orca Dies Before Being Released After Decades in Captivity

Lolita the Orca has passed away at the Miami Seaquarium after suffering a renal issue that took her life. Tragically, she was set to be released back in to the wild after several decades of confinement and forced servitude. Orcas, belugas, dolphins, etc., they do not belong in confinement for our entertainment. We are literally imposing a life-sentence on animals for our own gratification.

Quick Paneer & Broccoli Green Curry

I LOVE CURRY of all varieties, but I'm a sucker for a coconutty green curry. Creamy, a little sweet, rich, and full of heat and flavour. There's just something so comforting about a Green curry in my opinion.

I'm sharing a quick and easy version that relies on some premade items along with some fresh for a quick and flavourful curry. We're using already fried paneer cubes and a can of pre-made green curry that we're juicing up a little bit with some fresh items including broccoli, zucchini, and bell pepper.

Egg & Cheddar Melt Toast

​I'm super fond of piling a bunch of stuff on a perfectly grilled piece of sourdough toast, and calling it breakfast. A gorgeously golden piece of toast is the perfect vessel for whatever brekkie shenanigans you have in mind.

My Egg & Cheddar Melts are so wonderfully easy, savoury & rich AF, and delish. It all starts with our gorgeous bread, piled with a slathering of mayo, perfectly boiled eggs, & heaps of extra old white cheddar, broiled until melty and wonderful. Finished with fresh green onions and some additional heat from pepper flakes.

Pesto & Green veg Flatbread with Burrata

I love flatbreads in the summer! They're so quick to cook, easy to put together, and so fun to share. This version is something I created to utilize some green veggies I had in the fridge, and I couldn't be happier with how it turned out.

Multigrain, store-bought flatbread, smothered in pepperoncini and pesto, topped with blanched broccoli & asparagus, sliced zucchini, green onion, shallot, and crumbled feta. Once baked and golden, this flatbread is sliced & finished with gorgeous burrata cheese, more green onions, and some pretty arugula microgreens.

Air Fryer Street Corn

Nothing compares to a cob of fresh corn, blistered on the barbecue to perfection. However, I don't have one lol so my air fryer is here to save the day so that I can still have that street corn experience, without the bbq.

Fresh corn, air-fried until tender, slathered in Nando's perinaise and rolled in a combination of grana padano and lime zest. Finished with pepper flakes, lime, Tajin seasoning, green onions, and crumbled feta. It's bursting with flavour, easy to make, and delicious.

When I'm considering pasta recipes for summer, I want recipes that are fresh and simple, and quick to whip up. The last thing any of us want to be doing in the dead of summer, is standing over hot pots for hours. That's why my Medley Tomato Spaghetti is quite literally, the perf summer recipe.

It's got that simple, fresh vibe, relying on a few quality ingredients to create the dish. Gorgeous medley tomatoes, wine, and herbs, are the main components, perfectly cooked spaghetti, and some nutty grana padano.
