Cabbage Stew

​I feel like cabbage is one of those vegetables people either really enjoy, or really dislike. I'm definitely team cabbage and this chunky cabbage stew is so flavourful, so full of veggies and tender, delicious cabbage, and has a fabulous broth.

You get loads of veggies in this nutritious cabbage stew including carrot, loads of cabbage, tender zucchini, and mirepoix veggies. You get hearty, protein packed chickpeas in every bite, and you get a robustly flavoured broth that features tandoori seasoning & paprika for warm, spiced notes.

Paccheri Sausage Bolognese

I can't think of a better Meatless Monday recipe to put out than my Paccheri Sausage Bolognese. It's as meaty as can be without actually containing any meat whatsoever and I can guarantee, you'd fool any meat eater with this one!

Featuring Beyond Meat Hot Italian Sausages, the bolognese cooks for over an hour allowing the flavours to really intensify. It's so unbelievably flavourful, one of my fave bologneses I've made and the perfect sauce to envelop these gorgeous Paccheri noodles.

Romano Bean & Roasted Tater Bowls

I'm such a sucker for burrito bowls, taco bowls, all the bowls. A lovely bed of your preferred rice and a collection of delicious toppings...coming together to create a hearty and delicious lunch or dinner.

I roasted up some taters coated in a Tex-Mex seasoning blend until crisp outside, fluffy inside perfection. I also made a batch of saucy, seasoned romano beans as my second hot component and they were so yummy. I could have eaten them alone out of the skillet.

Then, it's as simple as assembling, saucing, and gobbling up. Crisp cabbage, sharp cheddar, saucy salsa, creamy sour cream, fresh green uns, and nutty cotija. Every bite was better than the last and even better, these are all easy to source ingredients, so you can always enjoy a variation of this bowl!

Roasted Broccoli Cheddar Risotto

My obsession with the combination of broccoli & cheddar continues with this dreamy, perfectly balanced risotto. I've said it before but there's something so right about broccoli and cheddar; they're best friends and my mouth couldn't agree more!

I roasted up the broccoli with a garlicky seasoning & pepper flakes until tender and slightly charred. In the meantime, I whipped up a pretty standard risotto but dumped heaps of grana padano and extra old white cheddar in at the end. It was so ridiculously rich and lovely, just right.

When you get that slightly charred broccoli against the rich and creamy risotto, it's a match made in heaven. Don't wait! Get on over to the RECIPES page ASAP!

Smashed Meatball Ciabattas with Pesto & Whipped Ricotta

This is kind of the sammie of my dreams you guys; it has everything I love wedged between toasty ciabatta bread. 

It starts with my plant-based meatball recipe, baked until tender and perfectly cooked. I've made my gorgeous blended green pesto recipe, which features toasted pine nuts, hemp hearts, and pepperoncini of course! A quick and easy whipped ricotta that's so dreamy, and perfectly grilled ciabatta.

You get creamy and rich, you get hot and savoury, fresh and herbaceous, and spice, all wrapped up in gorgeously golden brown bread. It is quite literally, a perfect sammie. Head to the RECIPES page.

Chik'n Parm Skillet

You really can't beat this comfort classic. What's not to love? Crispy, golden brown patties, saucy, perfectly cooked noods, melty cheese, ugh, the whole thing is just perfection!

The sauce is a riff on my traditional, blended sauce recipe with some roasted peppers and a cheese rind for some nutty undertones. Perfectly cooked bucatini is dredged in that gloriously vibrant sauce and topped with golden brown, plant-based chik'n patties. Slap on some mozz and grana, broil until bubbly and melty, and voila! Dinner is served!

I served this up family style all in one skillet, If you're incredibly interested in plating / presentation, I'd reccomend broiling the cheese on the patties separately and then nestling them on top of nests of saucy bucatini. That's all folks! Head to the RECIPES tab!

Garlic & Herb Croutons

There's absolutely no excuse for wasting day old crusty bread when croutons are so easy to make, and so bloody delicious. While they're delicious on salads and soups, they're also incredibly good for snacking as well. I ate the entire jar over 3 days because they were so flavourful and crisp!

The seasonings for this batch are simple, but it's incredibly easy to play around with your seasonings. You could always cater a batch to future recipes you had in mind and season your croutons accordingly. 

Next time you've got some leftover crusty bread, don't give it the old heave ho in to the trash and just whip up some easy peasy croutons.

Tex-Mex Cheeseburger Skillet Mac

I consider this an upgraded, from scratch Hamburger Helper, you guys remember that? Growing up, we did Hamburger Helper often; it was cheap, easy to feed all 5 of us, and usually pretty good. Admittedly, all the flavours kind of tasted exactly the same, but we didn't care back then lol

I used my standard roux based cream sauce, but added in some toasted Tex-Mex seasoning and other spices to take it in another direction. There's veggies too you guys lol some tomatoes, some peppers, the perfect companions to this flavour combo. 

What you get is a meaty, gloriously cheesy mac that's fairly easy to make, so cheesy and stringy, and full of flave. Head to the RECIPES page!

Pesto & Whipped Ricotta Tater Plate

Is it an appetizer? Is it a lunch for two? It's whatever you want it to be because it's freaking delicious and you need to try it., regardless of the time of day!

This recipe was inspired by a previous whipped ricotta plate I made, but this time, I had leftover fresh pesto that amped up the flavour. I also had a food processor this time around so the whipped ricotta recipe is so much easier than my original and keeps it simple and let's the flavours of the whipped ricotta really shine.

The crispy taters against the cool, creamy ricotta is such a delight for the taste buds. That fresh pesto pairs so well with the ricotta and taters, along with the addition of fresh herbs. It's a delicious plate that's easy to put together, stunning to look at, and fun to swipe through with those roasted taters. Head to the RECIPES page.
