Here's what I've got coming up!
1. Moussaka - This dish is often called a "Greek Lasagne" for its layers of eggplant & meat sauce. Topped with a creamy, thick layer of Bechamel sauce, this dish is definitely comfort food! My version is a bit lighter on the bechamel to reduce some of those calories. The dish has layers of roasted eggplant and potatoes, a delicious "meat" sauce, and loads of flavour! 2. Cilantro & Lime Rice A flavourful rice that can be used as a side or as the base to my delicious Burrito Bowls that are coming up! 3. Lime & Chili Beans Nice and spicy, these beans can be transformed into refried beans easily! They will also be a great addition to my Burrito Bowls 4. Burrito Bowls Layers of cilantro lime rice, spicy beans, melty cheese, fresh guacamole and pico de gallo, this dish is going to be a winner!

I honestly feel like the best recipes come to be when I've had drinks. Something clicks and I can think up recipes without even trying and they almost always end up being delicious. Is it because we know what we crave when we've had drinks? I don't know but if they keep turning out so good I might have to compensate by drinking more. :P Head on over to the RECIPES tab!
HAPPY VEG Salsa Verde is a favourite of mine! It's great on virtually every Mexican inspired dish you can think of and adds the perfect tangy freshness to your dish. I especially love dipping my fries / tater tots in salsa verde! Try it, you'll love it! NOTE: If your are lucky enough to find fresh tomatillo DEFINITELY go with the fresh but don't shy away from the canned! The canned variety is great for salsas! I still can't believe it's already been a year since I began this vegetarian journey of food, products, recipes, and everything in between. When I first began the site I really didn't know where I wanted it to go but I am so happy the direction I've taken. Little tweaks here and there from the original concept and I'm pretty happy! We've included a cheese ball of some sort every year with our holiday spread and I've always loved them. Creamy and delicious, you really can't go wrong here and they are really versatile. You can really mix in all sorts of ingredients to cater your cheese ball to your own tastes or even to pair it with a theme or flavour from a dish. This version is really gorgeous! Super flavourful pesto is added to the mix and the ball is gently rolled in a parmesan and parsley coating making for a delicious flavour combination!
Among the many things my mother was amazing at, holiday baking was her thing! A midst all the craziness that is the holidays, she always managed to produce 10 - 15 desserts in a week or two prior to Christmas. She was a powerhouse!
Her desserts were something that my siblings and I looked forward to every year, I mean it WAS the only time we were expected to eat endless amounts of goodies! She always baked in 2's. 2 Cookies, 2 Bars, 2 Tarts, 2 Breads etc You get the idea! My plan this year is to share with you all her XMAS recipes and I`m going to put my twist on a few to share with you all as well! BOILED RAISIN CAKE - A dense and flavourful cake bursting with hints of spice and juicy raisins. TRUFFLES - She made the very best truffles and they were SO EASY! Great way to get the kids involved! Rolled in various toppings including chopped nuts, sprinkles, coconut, and cocoa! I`m also going to whip up some delicious White Chocolate and Cranberry Cookies that are so delicious! HAPPY VEG In most cases, Jambalaya consists of sausage, chicken, shrimp, tomatoes, and rice / stock. This Louisiana dish has many varieties which vary based on preparation. The more Jambalaya recipes I searched online, the more I realized Cajun spices and seasonings were common along the board. Honestly, y'all will love this dish so much, it won't matter whether it's traditional or not. Play with the recipe and find your own version of Jambalaya.
