Chickpea Avocado Salad Sandwiches

​I absolutely love creamy sandwiches like this one. I find myself craving a sandwich quite like this one on a pretty regular basis and I always try to switch things up a little with my ideas to keep myself interested.

I've broken down my chickpeas and tossed them in a creamy avocado sauce that gives the salad such a luscious creaminess. All you need is a few simple ingredients to spruce things up and you've got a delicious salad just waiting to be stuffed between the creases of your favourite crusty roll. I absolutely love Pretzel style rolls but any roll will do so get those chickpeas ready and start making sandwiches!

CHICKPEA AVOCADO SALAD SANDWICHES

Smashed chickpeas, creamy avocados, and crusty rolls. It's one of the simplest salads to prepare and really makes for a delicious sandwich,. I've used the avocado to cut back on the mayonnaise and keep the creaminess of the salad where it needs to be. Avo is a wonderful mayonnaise substitute and offers up much more nutritional benefits so it's great to make the swap whenever you can.

RICOTTA STUFFED ZUCCHINI & SHELL BAKE

Stuffed shells are definitely one of my favourite dishes ever. This was actually one of my mother's specialties growing up so it's always such a treat to prepare them. I've swapped out some of the noodles and stuffed some gorgeous zucchini as well keeping things interesting and fresh. Both the shells and zucchini taste fabulous stuffed with their flavourful ricotta blend. Everything is baked up in a bed of tomato sauce and finished with a sprinkling of cheese for a seriously delicious dinner.

Potato & Parsnip Gratin

Gratins are one of my favourite side dishes. There are few vegetables that don't taste good in creamy or cheesy sauces and topped with crispy crumbs. Gratins are super simple to make, beautiful to present in a lovely baking / serving dish, and so delicious! 

This version features some beautiful potatoes and parsnips. The two pair so well together and taste fabulous in their creamy sauce. I've finished with a traditional crispy crumb topping baked up to perfection in the oven in under an hour. There's so much to love about this dish and I can't wait for you all to try it!

Let's feature parsnips!

Next week I'm focusing on Parsnips. Parsnips are absolutely delicious and can be utilized in a variety of ways. They can be eaten raw, boiled, mashed, roasted, or pureed, the options are endless. They are very closely related to carrots and parsley and have a sweet, peppery flavour especially when cooked. Their distinctly sweet flavour comes from enduring the first frost of winter which causes some of their starch to turn to sugars. They are undeniably versatile and so tasty, so this week's all about parsnips!
POTATO & PARSNIP GRATIN

A gratin is such a wonderful dish. It's such a beautiful and rustic looking dish to present at the table. Creamy veggies topped with a crispy crumb topping, so delicious! This gratin features potatoes and parsnips that become so tender after baking and really taste delicious in their creamy, thyme infused sauce. It's super easy to prepare and bake and so enjoyable, the whole family will be hoping for seconds!

SIMPLY ROASTED PARSNIPS

Roasted parsnips are a beautiful thing. They become nice and crispy on the outside, pillowy on the inside, and sweet and tasty. They can be diced hash brown style, cut into matchsticks, or chopped for roasting and are fabulous either way. I've got a recipe for a very simple batch of roasted parsnips to share with you all. Fresh thyme, pepper flakes, olive oil, and some sea salt are all that is needed. They're so delicious you might even consider replacing your potatoes here or there!

I have to say, I'm probably the guiltiest of all when it comes to giving in to my own cravings. I get the weirdest cravings out of nowhere and I can't let them go until they are fulfilled. Thing like fried pickles and ranch dressing, cheesy anything, sweets, and salty snacks periodically creep in to my mind and I remain unsatisfied until those cravings are met.

This article breaks down the meanings behind our cravings. Our cravings are so much more than how they manifest themselves to us. It's definitely worthwhile to consider what our bodies actually want from us when we experience these strange cravings.

Here are some of the cravings covered by the post:
  1. CRAVING CARB RICH FOOD? When your body is lacking energy, it begins to manifest itself as a craving for carb heavy foods like pasta, pretzels, or fresh bread. Although delicious, they often lack nutrients and are high in empty carbs. Consider eating grains or oats which keep you feeling full for longer and offer vitamins and minerals to boot!
  2. CRAVING SOMETHING SALTY? When you are stressed, cortisol is released which produces a desire for high fat, salty foods. Deep fried things, salty potato chips, and buttery salted popcorn; these things lack nutritional value and are fattening and high in sodium. The post suggests chickpeas and I definitely agree. Roast or pan fry some chickpeas until toasted and use your favourite seasonings. They are a delicious, protein packed snack!
  3. NO IDEA WHAT YOU'RE CRAVING? Ever felt like you pick at a variety of things waiting for something to be exactly what you're looking for? Your body might be lacking hydration because the same part of your brain controls hunger and thirst signals. Try enjoying an icy cold glass of water and see if that helps.

What I love about this article is that it truly aims to help you better understand your body. I am going to take a 1 week pledge to recognize my cravings and attack them as this article suggests. If I can avoid the next (entire) bag of pretzels late at night, I'd be ok with that!

Barley & Cheese

Creamy, cheesy, delectable. These are all words I would use to describe my Barley & Cheese. It's every bit as naughty as a regular mac and cheese except the addition of barley amps up the nutrition factor.

Making simple swaps like barley for pasta makes it easy to enjoy all of your favourite dishes with added nutritional benefits. Barley provides protein and fibre which is especially good to balance the constipation inducing cheese in this dish.

Another thing that's great about a cheesy dish like this one is that it's a great place to add some turmeric for anti-inflammatory benefits. Turmeric is fairly tasteless and blends right into a cheesy dish like this one so it's easy to hide a tbsp. of it.

Roasted Vegetable Penne

​I absolutely love roasted veggies. There's nothing quite like a sheet pan of beautiful, colourful, roasted vegetables. Roasting them brings out all of the best flavours they have to offer.

I've taken that sheet pan of roasted vegetables and garnished my bowls of tomato sauce penne with them. They take a plain old penne and really give it some oomph. 

The best thing about this recipe is how easy it is to switch things up. Don't like zucchini? Use eggplant! Don't have penne? Use rigatoni! No restrictions with this recipe! As long as you have some gorgeous roasted vegetables to garnish with, you're set to go!

ROASTED VEGETABLE PENNE

The name says it all. A sheet pans worth of beautiful roasted vegetables folded into tomatoey penne pasta. Roasting the vegetables brings out so much more of their flavour and those flavours really contribute to a beautiful bowl of pasta.

BARLEY AND CHEESE

Macaroni and Cheese has found its way into all of our diets at one point or another. There's something so comforting about a creamy, cheesy bowl of macaroni but it really doesn't offer much in the way of nutritional value. Swap the noodles for POT BARLEY and you'll be  adding some protein, calcium, and minerals to the dish. Barley has such an amazing texture and chew and tastes absolutely delicious smothered in a cheesy sauce.
