This is a nostalgic one for me y'all! I've been really missing my mom lately and wanting to recreate some of the dishes that I loved from my childhood. Stuffed shells, mozzarella skillets, and meatloaf, all of which were favourites of mine back in the day.

Meatloaf is definitely one of those quintessential diner classics. There's something so nostalgic about a ketchupy glaze, it really brings me back. These little meatloaf muffins will give you all the feels. Serve them up with some mashed taters and green beans, but make sure to save a couple for sandwiches the following day.

Tis the season for soups and stews as the weather continues to get colder. I'm always after a hearty bowl of stew on a chilly evening which is where this recipe came about. The biscuit topping was such a last minute thought, but one that ended up making this otherwise simple yet delicious stew, extra special.

The stew is as traditional as they come in my opinion; a combination of fresh and frozen veggies, hearty beans, and lots of fresh herbs, bubbling away together in the skillet. What makes this stew extra special is the addition of the drop biscuit topping.

I'm always on the hunt for brunch ideas when the weekend comes and I was super excited to find this recipe from Love and Lemons. I swapped out a few things and made some minimal changes to the original recipe but kept the idea the same. 

This breakfast casserole is chalk full of veggies like asparagus, sweet potato, and cremini mushrooms and baked until golden and stunning. I absolutely love how all of the veggies kind of create a top layer crust that's so beautiful and colourful. 

I also must admit, I usually dislike sweet potatoes but they really made this breakfast casserole extra special.

Ever since I purchased my cast iron skillet, I've been looking for anything and everything to make in it. What I'm especially fond of is the fact that you can often make an entire meal in just your skillet without needing to cook in a variety of pans. It really eliminates the clean up at the end of the meal!

This time around, I whipped up a delicious and hearty Shepherd's Pie that baked up perfectly in the skillet. The filling is about as traditional as they come with plant based beef, fresh cob corn that provides pops of crunch and sweetness, mixed veggies, and fresh herbs. Everything is baked under a gorgeous layer of mashed potatoes that I had fun piping on but you can totally just spread them on with a spatula. The piped potatoes however get nice and brown edges that really  invite you to tuck into it.
