Guys, I can't tell you how excited I am to finally test this recipe and put it out. I've been on a never-ending hunt for cannelloni noodles and for the first time in like, 5 grocery stores  & several weeks, I finally found them. Now, we celebrate with some delicious ricotta stuffed cannelloni.

We've got a flavourful blended tomato sauce for everything to bake up nicely in as well as a creamy, lemony ricotta filling that features pizza mozz for meltiness & extra old cheddar for some funky flave. Everything is baked until bubbly and tender and finished under the broiler to get some golden browning actsch on the top. Absolutely delicious!

There's something magical about the combination of mozzarella, pesto, and balsamic reduction. There's something even more magical about grilling some salty halloumi and throwing that in to the mix. I'm telling you, these sandwiches are fab - you - lous. 

In the recipe, I suggest splitting the sandwich and pairing it with something light and fresh like a salad. I tried to eat the whole thing myself and found it to be a little heavy. Looking for something incredibly easy to put together and absolutely delicious & full of flave? Say hello to my cheesy pesto tortellini skillet! 

I whipped up a super simple pesto that saves money by swapping out tradish pine nuts for raw walnuts and also adds some hemp hearts for additional nuttiness. Then, it's as simple as boiling some cheese tortellini, tossing it with pesto and some pepper flakes, and burying under mozzarella. Broil until bubbly and delish and you've got dinner in under 30 minutes.

I can't think of a more fitting recipe to share with y'all on a Meatless Monday. Salisbury steaks are a classic dish from yesteryear. They could be found on every diner, dive, and café menu across the US and Canada. While they may not be as popular today, there's no reason we can't vegetarianize it and bring it back.

Essentially, Salisbury Steaks are beefy patties cooked in a brown gravy and served over mashed potatoes.  It doesn't get any simpler than that and honestly, it's quite a treat. The gravy is nice and rich while being super savoury thanks to the PC plant-based beef broth. The beef patties are made from Impossible foods beef so they've got that familiar texture / flavour you'd expect from a salisbury steak. Head to the RECIPES page and bring back this classic with me ;)
