I have to admit, I am not the biggest lover of traditional salad. It rarely excites me to eat a salad, I love my vegetables but salad is usually so uninspired. With that being said, add a little cheese and some exciting flavours and I'm down for a salad any day!

MINI POTATO & CREAMY PEA BAKE
I modeled this dish after a traditional scalloped potato recipe but I added a little twist. Blending up the peas into the sauce not only gives you a beautifully coloured sauce, but also allows you to enjoy the flavour of peas in every bite. The creamy pea sauce envelops the potatoes and really makes every bite so delicious. Everything is baked up until bubbly and lightly browned on top for a side dish that you'll be making again and again.
There were so many flavours in every bite and they all worked so very well together. Creamy ricotta gets a flavourful friend in pesto which really pops against the polenta and roasted corn. The polenta itself is lightly crisped on the outside and soft and delicious on the inside. The corn plays up the flavour of the polenta and brings everything together.
