Easy Mexican Stuffed Peppers

Ready for the easiest stuffed peppers ever? My Mexican Stuffed Peps rely on pantry items to create an easy, delicious meal that takes no effort at all.

We're using a box of Old El Paso Mexican rice, a can of seasoned, Mexican pinto beans, a jar of your favourite red or green enchilada sauce, and some cheese / garnishes. Everything is piled inside of fresh bell peppers and baked uncovered until tender, melty, and golden from the oven.

Make sure you've got some delicious garnishes handy. I went with feta, cilantro, and hot sauce, but you could easily add salsa, sliced green onions, diced jalapenos...the options are really endless. Head to the RECIPES page.

Jalapeno Cheddar Tater Hash

First of all, I hate myself for allowing this plate to be off center. Like, you can clearly see that the hash is plated off center, and, I can't change that now despite literally hating myself for that lol 

Photo fail aside, my Jalapeno Cheddar Tater Hash is an easy, skillet brunch, that comes together in less than a half an hour. A seasoned sauté of jalapeno, red onion, bell pepper, & frozen hashbrown cubes, along with eggs, fresh cilantro, and some old marble to finish everything off.

Tomato & Artichoke Flatbread with Burrata & Calabrian Chili Pesto

For me, a flatbread is super easy eats. It's as simple as preheating your oven, slapping on your favourite toppings, and baking for less than 15 minutes. It's one of my favourite meals to have through the week because it's just so quick and so satisfying.

For this flatbread, we're starting with store bought, Calabrian Chili Pesto. A little spicy, a little sweet, a little nutty, and super delicious. Then, some fresh grape tomatoes, marinated artichokes, and dried oregano. Bake until crispy, and top with creamy, delectable burrata cheese, sweet balsamic reduction, and peppery, fresh arugula.

I love this combination of flavours. You get some heat from the pesto & pepper flakes, cutting through the rich burrata along with freshness from that gorgeous arugula. This is one easy flatbread you guys need in your weeknight rotation. Head to the RECIPES page.

I'm obsessed with this recipe you guys! A while back, I created a recipe for meatballs over polenta and I remembered really loving it, so that's what inspired my Spicy Sausage Bolognese over Polenta!

Hot Italian Beyond Meat Sausages create the most flavourful bolognese. Paired with wine, milk, San Marzano tomatoes, and seasonings, intensified over hours of cooking. I served my bolognese over some cheesy, buttery polenta. You get this rich, creamy polenta against this spicy, robust Bolognese. It's a perfect pairing and available now under the RECIPES tab.

Garlic & Herb parisienne Potatoes

When I was younger, I was convinced that Parisienne potatoes were some bougie variety of tater. They just seemed high maintenance to me lol The fact is, they're just regular potatoes scooped with a melon baller, or something similar to give them that smooth, round shape.

My Garlic & Herb Parisienne Potatoes are as simple as it gets. A combination of fresh & dried herbs, smashed garlic, butter, and just under an hour in the oven. Once roasted, they're slightly crisp but it's more about the inside. They're so fluffy inside and wonderful, I love them and I think you will too.

Another day, another banging mac & cheese recipe for you guys! You're going to appreciate everything about this cheesy mac; from the multitude of cheeses to the crispy, golden cracker crust.

Featuring a combination of cream cheese, aged gouda, aged marble, spicy Monterey jack, and vintage white cheddar, and topped with a buttery, white cheddar cracker crumb that gets so golden brown and crispy in the oven. It's about as good as it gets y'all so head to the RECIPES page <3

Sweet Potato Black Bean Bowls

I've been really in to brown rice bowls lately. They're nutritious, hearty, and fun to make / eat. The compartmentalized appearance is also really appealing to me; so many pretty colours arranged around your dish.

I roasted some sweet potatoes and seasoned them heavily, opened up a can of salt-free black beans, and whipped up a quick, blistered corn salsa. After that, everything else is what you have on hand in your fridge. I suggested some pickled onions, cabbage, and cheeses, but you could really do whatever you had in the fridge. Green onions, salsa, a different cheese, no cheese, etc. It's all about the sweet p's in this bowl!
