A bowl of soup is legitimately one of the best meals to enjoy on a cold day. It's warm and comforting, like sitting by the fire sipping on hot chocolate, it gives you the same sensation. There's something so very right about it!

I've got a delicious chowder recipe for you guys to enjoy full of fresh vegetables and a creamy, buttery broth. Vegetables like cauliflower, broccoli, and fresh corn, along with barley which adds a wonderful bite to the soup. I used barley in place of potatoes which you may typically find in your chowder but I find the barley adds a little something extra to the soup.

PESTO & PARMESAN CHICKPEA SALAD STUFFED SKINS

The key to perfect potato skins is baking them twice. Removing the potato insides and returning them to the oven to crisp up is crucial for perfectly crispy potato bowls.

This week, I'm stuffing my skins with a twist on my chickpea tuna salad. I've added pesto and parmesan for a savoury twist to the salad. The combination of crispy skin and creamy chickpea salad is a match made in heaven. You and your guests will be in snacking paradise with these skins!

VEGETABLE BARLEY CHOWDER

Y'all know I love barley. It is legitimately my favourite thing in soup, it provides the perfect amount of texture and chew to a soup that otherwise contains vegetables that are likely cooked perfectly but lacking a little crunch.
I've got a creamy chowder for you guys that really warms you up from the inside out. A collection of chowder friendly veggies including cauliflower, fresh corn, and broccoli, swimming in a creamy, buttery broth. The addition of barley is perfection in this chowder, I know you guys will agree!

Roasted potatoes are the best, they go with any food you want to pair them with and any combination of flavours you can create. Their neutrality is what makes it so fun to work with them in the kitchen!

When it comes to a satisfying snack, look no further than roasties. Everyone makes roasted potatoes, they're seriously delicious and I've got a version of roasties that I think y'all will love. Lemon for freshness and feta cheese for saltiness and creaminess are added to the roasties along with seasonings and garlic. These roasties are next level delicious for being really quite easy.

Casserole Love

Casseroles have a bad reputation as an 80's dish that needs to be buried but in fact, they're still one of my favourite dishes to prepare. There's so much to love about the casserole, you can make pretty much anything a casserole, it's one dish to clean, and they're easy to whip up. You can stuff all kinds of hearty and delicious foods into a casserole, bake it up, and have a delicious dinner in no time.

With that being said, fall is upon us and the weather is getting colder so utilizing your oven is a must. It's a cheap way to warm up the house and get a great meal at the same time! I'm breaking down 6 of my favourite casserole style recipes I've written to date and what's so bloody great about them!

BAKED VEGETABLE CURRY

Curry is such a comforting dish. The smell of curry cooking is one of my favourite smells in the kitchen and always gets me hungry long before the dish is ever ready.

Curry is great on the stove top but I whipped up a batch in the oven and it was fantastic! This casserole is as simple as tossing all of your ingredients together and baking them until tender and delicious.

Trust me when I say, curry is utterly delicious out of the oven! Give it a try!

BROCCOLI MASHED POTATO BAKE

What's better than a serving of creamy mashed potatoes? How about casserole of cheesy mashed potatoes, broccoli, and a finishing layer of crispy potatoes? This casserole was one of my favourites because my love for potatoes is legit. You get creamy, cheesy mashed potatoes, tender broccoli, and another fabulous layer of sliced potatoes that gets nice and crispy in the oven. Potatoes on potatoes, now that's a casserole I can get down with!

CHEESY CAULI BROCCOLI BAKE

I don't always suggest smothering your vegetables in cheese, but if you're going to do it, then this is the way!

Cauliflower and broccoli florets pair so wonderfully with cheddar. It's a well known fact that almost anything tastes better blanketed under a layer of melty cheddar and these veggies are no exception. This casserole is the perfect side to almost any main course you're planning to serve and couldn't be easier to put together.

CREAMY PIEROGI AND BROCCOLI BAKE

Pierogis are one of my favourite things to eat. Little pillows of happiness with their delicious potato filling. I've enjoyed them boiled, fried, and even baked, but how about smothered in a casserole?

This casserole is super hearty and satisfying with delicious, pillowy pierogis, tender broccoli, and a lusciously creamy sauce. Once baked, this casserole smells so inviting, almost as if it's suggesting you sit down at the table and prepare yourself. Trust me when I say you'll reconsider how you prepare pierogis after this casserole!

CREAMY MINI POTATO PEA BAKE

What's especially wonderful about this bake is the green pea sauce the potatoes are baked up in. Blending up the peas with cream, milk, and spices, creates a luscious sauce that envelops the potatoes and bakes up beautifully. This casserole is finished with an herbed cheddar and baked until bubbly and brown on top. You'll want seconds of this casserole for sure!

SPINACH & MOZZARELLA RAVIOLI BAKE

Pasta bakes are some of my favourite meals. Delicious sauces, tender noodles, and some kind of melty cheese. It's a match made in heaven!

This bake is special because of the ravioli. Fresh ravioli bakes up wonderfully with very little prep work. Toss in some fresh spinach, ricotta cheese, and melty mozzarella, and you've got a pasta party! This is one meal time bake that you'll be making again and again!

Quick Balsamic Bean Salad

What makes this salad so quick and simple is canned beans! Working with dried beans is certainly more economical but that shouldn't stop you from having a can or two for quick recipes like this!

Quite simply, drain and rinse the beans, add some fresh chopped veggies, and dress. It's simple as that and you've got a hearty and flavourful salad to enjoy with lunch or dinner. It's delicious!

Also, remember to switch up your vinaigrettes! If you find a simple salad like this one for example that you love, change it up by using red wine vinegar or apple cider vinegar for a different flavour. You can enjoy the same salad several times if you switch up your flavours making weeknight recipes a cinch!

QUICK BALSAMIC BEAN SALAD

Beans are absolutely as wondrous as we think they are. Full of protein, vitamins, and fibre. they're a great asset to a Vegetarian / Vegan diet. Enjoying them in salads is another great way to get more beans into your diet.
Fresh vegetables and a wonderfully simple balsamic vinaigrette take these beans to salad status for a fresh and flavourful bean salad that's ready in a flash!

LEMON & FETA MEDLEY ROASTIES

I absolutely love medley potatoes. I love the colour they bring to a dish but they're delicious as a standalone snack as well.
Seasoned and roasted until with lemon until tender and finished with a sprinkling of feta cheese. The feta and lemon really work together beautifully, the lemon cuts through the richness and saltiness of the feta for a delicious bite every time.
