VEGETABLE BARLEY CHOWDER
Y'all know I love barley. It is legitimately my favourite thing in soup, it provides the perfect amount of texture and chew to a soup that otherwise contains vegetables that are likely cooked perfectly but lacking a little crunch.
I've got a creamy chowder for you guys that really warms you up from the inside out. A collection of chowder friendly veggies including cauliflower, fresh corn, and broccoli, swimming in a creamy, buttery broth. The addition of barley is perfection in this chowder, I know you guys will agree!

Casseroles have a bad reputation as an 80's dish that needs to be buried but in fact, they're still one of my favourite dishes to prepare. There's so much to love about the casserole, you can make pretty much anything a casserole, it's one dish to clean, and they're easy to whip up. You can stuff all kinds of hearty and delicious foods into a casserole, bake it up, and have a delicious dinner in no time.
With that being said, fall is upon us and the weather is getting colder so utilizing your oven is a must. It's a cheap way to warm up the house and get a great meal at the same time! I'm breaking down 6 of my favourite casserole style recipes I've written to date and what's so bloody great about them!
BROCCOLI MASHED POTATO BAKE
What's better than a serving of creamy mashed potatoes? How about casserole of cheesy mashed potatoes, broccoli, and a finishing layer of crispy potatoes? This casserole was one of my favourites because my love for potatoes is legit. You get creamy, cheesy mashed potatoes, tender broccoli, and another fabulous layer of sliced potatoes that gets nice and crispy in the oven. Potatoes on potatoes, now that's a casserole I can get down with!
CREAMY MINI POTATO PEA BAKE
What's especially wonderful about this bake is the green pea sauce the potatoes are baked up in. Blending up the peas with cream, milk, and spices, creates a luscious sauce that envelops the potatoes and bakes up beautifully. This casserole is finished with an herbed cheddar and baked until bubbly and brown on top. You'll want seconds of this casserole for sure!
SPINACH & MOZZARELLA RAVIOLI BAKE
Pasta bakes are some of my favourite meals. Delicious sauces, tender noodles, and some kind of melty cheese. It's a match made in heaven!
This bake is special because of the ravioli. Fresh ravioli bakes up wonderfully with very little prep work. Toss in some fresh spinach, ricotta cheese, and melty mozzarella, and you've got a pasta party! This is one meal time bake that you'll be making again and again!
