Potato Pancakes with Pepperoncini, feta, and Chives

These potato pancakes are so yum, it's ridic. We're shredding taters with onion, garlic, habanero cheddar, parsley, eggs, and flour, and frying them up in a butter + EVOO combination. The butter brings the flavour and the EVOO keeps the butter from scorching in the pan. Best friends much?

It's all about the garnishes with my potato pancake recipe. I served mine up with some spicy pepperoncini, fresh chives, tangy, crumbled feta, and sour cream. The spice helps cut through the richness of the patties themselves and pairs so well with feta cheese. They're really spectacular.

A 10th wolf was illegally poached in Oregon prompting conservation and welfare groups to offer a $22, 500 reward for information leading to an arrest. Roasted Edamame

When I first tested this recipe, I had done so with frost bitten edamame and it was a serious let down. So, prior to preparing this recipe, I'd suggest you make sure your frozen edamame are in good condish because the focus is on the edamame and shriveled up, dry, chewy edamame should never be on the menu

Anyways, round 2 vibes and let me tell you, these are addictive AF. So garlicky and spicy, ugh, I ate almost the entire batch myself. I promise y'all, once you start eating them, you'll never be able to stop.

Cincinnati Chili

What is Cincinnati chili? Quite simply, it's a meaty sauce that's infused with spices like cinnamon, clove, all spice, and chili powder that's cooked down until thick and meaty. This chili is then served over hot dogs or more traditionally, spaghetti. Then, it's up to the garnishes to determine which "way" you'll consume your chili.

2 Way - Chili on spaghetti
3 Way - Chili on spaghetti with shredded cheese
4 Way - Chili on spaghetti with shredded cheese and raw onions
5 Way - Chili on spaghetti with shredded cheese, raw onions, and stewed kidney beans.

Chili on spaghetti might sound strange, but when you try it, you'll see what makes it so special and unique. I served mine up in the 4 way style which I'd recommend because those onions add a nice crunch to the dish. Head to the RECIPES page!

Gnocchi Pomodoro with Kale

I've been investing a lot of my Instagram time following the Pasta Queen and she's not only kept me incredibly entertained, but inspired me to cook even more simply when it comes to Italian sauces. (If you've never checked her out, I implore you to google her. She's so funny and her food is A+) 

With that being said, here's an incredibly simple weeknight meal that comes together in under 35 minutes. My Gnocchi Pomodoro with Kale starts with the essentials; garlic, pepper flakes, EVOO, and fresh basil. Then, it's as simple as adding onion, strained tomatoes, kale, and some salt. Penne Arabiatta with Mozz Stuffed Meatballs

If you're a sucker for spice like I am, you're going to love my Penne Arabiatta. Quite simply, it's a red sauce that's infused with heat from pepperoncini. It's an incredibly simple sauce that relies only on premium ingredients for a spectacular taste. I strongly suggest you use San Marzano tomatoes for this sauce. When there's so few ingredients, the ones you use must be of the utmost quality for best results.

What are we serving with our spicy tomato sauce? We're serving up mozzarella stuffed Impossible meatballs. The meatballs are ridiculously tender and juicy, and obviously delicious when they're stuffed with mozz. This recipe is super simple and absolutely delicious. 

Obviously I served mine up with penne but you could swap that out for spaghetti, linguine, or even another tube shaped pasta. There's no rules here. Head on over to the RECIPES page.

US - The SAFE ACT Must Pass to protect Horses

The United States stopped slaughtering horses for meat back in 2007 but they've continued to export horses to Canada & Mexico where they are slaughtered for meat. The SAFE ACT intends to ban the consumption of horses for meat but would also ban the export of horses if they're being slaughtered for meat. It is imperative that the ACT passes Congress so that the US is no longer taking a hypocritical stance on horse consumption.

Curried Lentils & Eggs

This dish is giving off like a curry meets shakshuka vibe and I'm here for it. I whipped up a coconut curry sauce infused with flavours like fenugreek, curry, and tandoori blend, simmered some lentils, and cracked in some eggs until set and delicious.

To finish, some cooling, creamy actsch from the Greek yogurt, freshness from the cilantro, and some salty tanginess from the crumbled feta. When that yolks meets the curried lentils, it's truly a perfect pairing that sits so beautifully on a perfectly grilled piece of sourdough.
