I LOVE STUFFED SHELLS! 

Growing up, there were a handful of dishes that my mother would make on occasion that always got us kids excited for dinner and stuffed shells were definitely one of those dishes. Her version utilized both cottage cheese and ricotta offering up a variety when serving, both of which were delicious.

I went in a similar direction with a 4 cheese ricotta filling that includes tangy and salty feta cheese, mozzarella, and extra old cheddar for funk and flavour. There is also some spicy, sauteed spinach that is folded into the filling because we all need more greens in our lives. Shells are then stuffed with the glorious filling and baked in my tomato sauce blended with heavy cream for a richer, smoother sauce that is velvety and delicious.

What you end up with is two glorious dishes filled with the cheesiest and most delicious baked shells you've ever had. They definitely do my mother proud and I think y'all are going to love them!
