Broccoli Couscous Lunch Bowl

​If couscous isn't one of your favourite things to eat yet, it will be after this delicious lunch bowl. I love couscous because it cooks so very quickly making it great for hot days when cooking is the last thing you want to be doing.

To amp up the nutrition factor of the couscous, I broke down some fresh broccoli in the food processor and folded it into the cooked couscous. Not only does the broccoli add nutrition, it adds flavour and a wonderful green colour to the couscous.
What I especially love about this lunch bowl is the combination of fresh and cooked. The raw veg are perfect for snacking in between bites of creamy grilled avocado and warm couscous. 

For a heavenly bite, take a scoop of the avo and a scoop of the couscous together. The creamy avocado pairs so perfectly with the warm couscous it really makes for great eats.

Scones are such a treat because they seem to fit into any time of the day. They're great in the morning with a cup of tea, delicious for brunch, and great for a snack. 

I've got a recipe for cheesy dill scones that I think you guys are going to love.  These scones are savoury and delicious with little pockets of cheddary goodness and a welcome freshness from the dill. 
This recipe is actually great in all sorts of ways. Try swapping out the cheese and dill for fresh fruit for a sweeter scone or play around with your savoury combinations for a new scone every time. Head to the RECIPES page for the recipe!

BROCCOLI COUSCOUS LUNCH BOWL

Summer is here and heating up the stove / oven is the last thing I personally want to do. That's where couscous comes in! It's as simple as boiling water quickly and stirring the couscous in, there's very little time and heat involved!
This lunch bowl is easily customizable to whichever raw veg you'd like to include so you can enjoy it a variety of ways.
Slapping some avo's on the grill quickly adds the perfect bite of richness with the couscous in between all of your fresh veggies. 

Simple, fresh, and ready in a flash. The perfect summer lunch!

Cheddar & Dill Scones

Scones can be made savoury or sweet depending on your own preference. I've always been more of a savoury fellow so that's the direction for this batch of scones. Cheesy, crisp, and mildly tangy from the dill, these scones are an absolute treat to enjoy for a late breakfast with tea or an afternoon snack. You can essentially use any herb / cheese you desire as long as you follow all of the other ingredients. This one recipe can give you several varieties of scones to enjoy!

Tomato Salad topped Crispy Red Potatoes

A perfectly cooked potato is a wonderous thing. I can enjoy them pretty much any way you cook them but I absolutely love oven "frying" them. To oven fry a potato, you simply add enough oil to the sheet pan that the potatoes will "fry" at the high temperature needed to cook the potatoes. The result is crispy, perfectly golden brown potatoes that are begging for a fresh and delicious topping!

The perfect contrast comes from the fresh tomato salad. Tomatoes, cucumbers, feta cheese, and herbs tossed in a light dressing and placed on top of the crispy potatoes for a fresh kick to the crispy, savoury potato slices. The fresh salad pops against the crispy, salted potatoes making every bite a combination of hot & cold as well as fresh and savoury. Everything works so well together, I think y'all are going to be hooked on these taters!

Blended soups are probably my favourite variety of soup. I love how when a soup is blended, all of the flavours really come together to make this beautiful, flavourful, creamy bowl of soup.

I've got a wonderful recipe for Broccoflower soup to share with you all this week. Broccoflower is simply a blend of both broccoli and cauliflower coming together to make a wonderful soup. The two cruciferous vegetables make quite a delicious soup and I especially love the colour. It becomes a pastel coloured green that is truly inviting.

ERADICATING THE GREY SQUIRREL IN THE UK - The grey squirrel was brought over to England in the late 1800's and since its arrival, locals have taken note of the problems they supposedly bring with them. Most importantly, the native red squirrel is dying off and people are blaming the grey squirrel. Several initiatives are in place to convince the people to start slaughtering grey squirrels. Is this the right approach? Can killing thousands of grey squirrels really be the only solution?

SADISTIC ABUSE OF CHICKENS IN BC - Mercy for Animals went undercover and exposed some seriously grotesque abuse of chickens. This particular company has already been busted for abuse on their cattle farms and now it's happening within their chicken industry. Punishment is not enough, let's talk about how this is happening and why it takes undercovers to expose it!

LIVE DONKEY FED TO TIGERS AT CHINA ZOO - China has one of the poorest reputations when it comes to animals. They are consistently proving that they have no regard for animal life and this is no different. Onlookers at this zoo watched as an innocent donkey was thrown into a tiger enclosure and attacked for over 30 minutes before being subdued. These sorts of activities are common here and nothing is being done. The Chinese government needs to step up their animal rights and soon before more animals are abused for entertainment.

BROCCOFLOWER SOUP

This creamy, blended soup is definitely one to add to your soup collection. The two cruciferous vegetables taste delicious together and with just a bit of seasonings, you've got a wonderfully creamy, rich, and delicious soup. It's especially lovely considering cauliflower is coming at a pretty high cost nowadays so using some broccoli is cost efficient to boot!

TOMATO SALAD TOPPED CRISPY RED POTATOES

For being a simple dish, it's quite wonderful. Crispy, oven baked red potatoes topped with a fresh salad of tomatoes, feta, cucumbers and peppers. The contrast of crispy, warm, and salty against the fresh and light tomato salad is wonderful. The salad is also absolutely delicious to eat as a standalone salad. It's a double whammy!

Potato & Zucchini Bake

I can't tell you how many times I've tried to recreate this dish I had at the Three Amigos restaurant a few months back. It was so bloody delicious and also quite unique as I had never seen anything like it on any other Mexican menu .

Every attempt to recreate it gets me one step closer and also provides me with new, delicious recipes like this one! Potatoes, sliced zucchini, corn, and a plethora of spices baked up until tender and delicious and finished with a sprinkling of monterey jack cheese. All of the spices really pop against the fresh veggies and the melty cheese is exactly what the dish needs.

I'll recreate that special dish for y'all one day but in the meantime, enjoy my potato and zucchini bake!
