Cheddar & Dill Scones
Scones can be made savoury or sweet depending on your own preference. I've always been more of a savoury fellow so that's the direction for this batch of scones. Cheesy, crisp, and mildly tangy from the dill, these scones are an absolute treat to enjoy for a late breakfast with tea or an afternoon snack. You can essentially use any herb / cheese you desire as long as you follow all of the other ingredients. This one recipe can give you several varieties of scones to enjoy! Hey everyone!

I can enjoy them pretty much any way you cook them but I absolutely love oven "frying" them. To oven fry a potato, you simply add enough oil to the sheet pan that the potatoes will "fry" at the high temperature needed to cook the potatoes. The result is crispy, perfectly golden brown potatoes that are begging for a fresh and delicious topping!
The perfect contrast comes from the fresh tomato salad. Tomatoes, cucumbers, feta cheese, and herbs tossed in a light dressing and placed on top of the crispy potatoes for a fresh kick to the crispy, savoury potato slices. The fresh salad pops against the crispy, salted potatoes making every bite a combination of hot & cold as well as fresh and savoury. Most importantly, the native red squirrel is dying off and people are blaming the grey squirrel. Several initiatives are in place to convince the people to start slaughtering grey squirrels. Is this the right approach? Can killing thousands of grey squirrels really be the only solution? SADISTIC ABUSE OF CHICKENS IN BC - Mercy for Animals went undercover and exposed some seriously grotesque abuse of chickens. This particular company has already been busted for abuse on their cattle farms and now it's happening within their chicken industry. Punishment is not enough, let's talk about how this is happening and why it takes undercovers to expose it! LIVE DONKEY FED TO TIGERS AT CHINA ZOO - China has one of the poorest reputations when it comes to animals. They are consistently proving that they have no regard for animal life and this is no different. Onlookers at this zoo watched as an innocent donkey was thrown into a tiger enclosure and attacked for over 30 minutes before being subdued. These sorts of activities are common here and nothing is being done. The Chinese government needs to step up their animal rights and soon before more animals are abused for entertainment. BROCCOFLOWER SOUP This creamy, blended soup is definitely one to add to your soup collection. The two cruciferous vegetables taste delicious together and with just a bit of seasonings, you've got a wonderfully creamy, rich, and delicious soup. It's especially lovely considering cauliflower is coming at a pretty high cost nowadays so using some broccoli is cost efficient to boot! TOMATO SALAD TOPPED CRISPY RED POTATOES
For being a simple dish, it's quite wonderful. Crispy, oven baked red potatoes topped with a fresh salad of tomatoes, feta, cucumbers and peppers. The contrast of crispy, warm, and salty against the fresh and light tomato salad is wonderful. The salad is also absolutely delicious to eat as a standalone salad. It's a double whammy!
