Cucumber Cream Cheese Summer Sandwiches

Growing up, cucumber cream cheese sandwiches were my favourite. I especially loved smearing cream cheese on cucumber slices and enjoying it just like that. Crispy, cool cucumbers and creamy cheese pair so well together.

These mini summer sandwiches are great. They're no cook which is perfect for summer, they're super easy to whip up in large quantities, and only require a few simple ingredients.

3 Great Hummus Recipes coming up!

I love hummus. I love how creamy and rich it is. I also love that it is a much healthier "dip" than what you will get in any sour cream or mayonnaise based dip thanks to the chickpeas. Chickpeas are full of protein, iron, and fiber and low in fats and cholesterol. Did I mention delicious?

I've got 3 hummus ideas I'll be testing today and I wanted to give you guys a sneak peek of what I had in mind. .
. .

*** SPINACH & ARTICHOKE Hummus
    A blend of chickpeas, tahini, pepper flakes, and spinach with artichokes worked into the mixture after blending. I see this one being delicious and with the spinach included, extra nutritious as well!


*** ROASTED CHICKPEA Hummus

    A blend of roasted chickpeas, tahini, lemon, and garlic all topped off with fresh parsley, smoked paprika, and EVOO. I think the roasted flavour will add another layer to this hummus that will be so delicious.


*** BASIL & AVOCADO Hummus

     A blend of chickpeas, avocado, basil, and tahini topped off with a fresh pop of parsley.

Spinach Salad

Salads and Summer are the perfect pair. A refreshing salad is perfect for a summer side dish because there`s no cooking involved!

Fresh spinach, avocado, tomatoes, and onion tossed together with salty, creamy feta and a simple vinaigrette for an all around delicious salad.

Remember, this salad will be best eaten right after being dressed. The longer the spinach sits coated in dressing the less appealing it will become. Serve it right away to enjoy it at its best!


If you would like to prepare in advance, leave out the avocado until you are ready to dress the salad otherwise it will likely be brownish by the time you try to eat it.

The name says it all. A blend of banana, fresh spinach, and a combination of chocolate and almond milks for a creamy, satisfying smoothie. Can't go wrong with a nutritious AND tasty summer treat!

CUCUMBER & CREAM CHEESE SUMMER SANDWICHES


This is one of my favourite sandwiches ever. Smooth and creamy cheese pairs so well with cool, crispy cucumbers. It's also great for summer as it is a no cook sandwich! It's so simple to whip up a batch of these for guests.



SPINACH SALAD WITH FETA, AVOCADO, AND GRAPE TOMATOES


A lovely, fresh salad made up of spinach, grape tomatoes, salty feta cheese, and creamy avocado dressed in a simple and delicious vinaigrette. It's a delicious salad everyone will enjoy!

New Smoothie posted + Tips / Tricks

I've only just begun "smoothie-ing" but I've already figured out a few tips for ensuring you get both a nutritious AND delicious smoothie every time!
  • Balancing out tart / bitter flavours is important for enjoying the deliciousness of your smoothie. Whenever you are using tart fruits like berries for example, you want to balance out with a fruit that is sweet. This includes peach, pineapple, or even mango. Using honey is also a great sweetener and doesn't alter the flavour of the fruit.
  • Slip in extra greens for extra nutrition. When I am making a fruit smoothie, spinach is my favourite green to slip in. A couple cups blends right in and is easy to cover up with most fruit flavours. Great for getting extra greens into the kiddies but also amping up the nutrition factor of the smoothie.
  • Layer properly. Always start with the fresh ingredients at the bottom followed by the liquids and frozen ingredients (frozen fruit / ice).
  • Balance out fresh and frozen. There's nothing wrong with all fresh or all frozen but the combination of the two creates a smooth and creamy blended beverage. If you are using fresh strawberries, try using frozen bananas. It keeps the drink yet yet perfectly creamy and blended.

Refreshing Summer Cauliflower Salad

Did you know that almost every cruciferous vegetable loses its anti cancer properties upon being cooked? This means, every time you cook your broccoli, cauliflower, kale etc, you are cooking away some of the most important nutrients in the veggies.

Is it possible to eat raw broccoli ALL THE TIME? No, but it's great to get creative and find new ways to enjoy cruciferous veggies raw.

My Refreshing Summer Cauliflower Salad is so fresh and delicious and really packs in the nutrients. It's so simple to prepare and because it is blended it is much easier to eat a big helping of it. I love raw cauliflower as much as the next guy but I can only eat so much.

Here's the solution, a tangy, fresh, and flavourful salad!

Bestiality in Canada - The Law

Recently I shared with you all a disturbing story regarding what I'm going to call bestiality. The man utilized his dog to sexually abuse his stepdaughter. His charges were dropped due to the legal definition of bestiality only encompassing penetration.

I have attached a link to the actual law itself which outlines specifically penetration. It states that the law does not include oral sex or genital touching. I just want that to sink in for a minute. The law says that sexual touching and oral sex with an animal is NOT ILLEGAL! What year is this? I am so completely shocked and appalled that the law actually outlines oral / sexual touching as not included within the term "bestiality". In this day and age, we have come so far with the rights of our minorities including African American rights, Women's rights, and LGBT rights because our communities have rallied to protest and demand better treatment under the law. These laws reflect our changing views as a society. With that being said, our animal rights have been overlooked for over 50 years. That's 50 years that people have exploited and sexually abused animals with little to no punishment.

I am still awaiting a response in regards to my email from the Supreme Court. My email to the PM's office was responded to and they said they carefully reviewed my email and forwarded me to the Attorney General of Canada. All I can say is I hope I can get the right people talking. I hope I can get the right people questioning the legality of bestiality and questioning their morals in this situation. I do not support something I can not 100% stand behind and I'm hoping that with attention, the appropriate parties will also stand up and say, "I don't agree with this".

It's time for change in Canada! What an embarrassment this case was and it really shone a light on how archaic and in need of updating our animal rights laws are. I truly hope I can pioneer change and I hope I can count on each and every one of you for support!

Veggie Stir Fry over Brown Rice

So fresh and delicious. I make stir fries quite often and like to try and swap veggies in or out each time to keep things fun and fresh. I happened to have some mini yellow fleshed potatoes and despite the whole starch on starch thing, they paired so wonderfully together!

All a stir fry needs is some fresh veg, a little seasoning, and some pillowy rice. Such a simple and delicious meal!

MIXED BERRY & BANANA SMOOTHIES

So after my cookbook went live I came to the realization that there were very limited ways of accessing it. I kind of thought it would go completely available as an e-book but this is not the case.
