This was my first attempt at green curry and it was remarkable. So much flavour, the dish was seriously such a treat! I seasoned and roasted some chickpeas as well to give the dish a bit more crunch and flavour and provide a welcome texture as well.

Potato salad is one of my favourite sides to a meal and I've always said it's so easy to create the perfect potato salad to compliment any meal. Potatoes are so versatile and neutral in flavour that they work well with any combination of vegetables and seasonings. Let's look at some of my favourite tater salads!
VEGETABLE GREEN CURRY WITH ROASTED CHICKPEAS What a delicious dish this turned out to be. Incredibly flavourful and texturally on point, everything about this dish was a YAAAASSS. Green curry is flavourful and mildly spicy making it great for those who are reserved when it comes to trying new things. The roasted chickpeas are spiced and baked to perfection contributing a welcome crunch that works so well with the dish. A squeeze of lime juice to finish everything off and voila! SPRINGTIME POTATO SALAD
Peas are synonymous with spring. They provide a whack of nutrients essential to our health and offer vibrancy and crunch to a dish. I figured a simple and delicious potato salad celebrating peas and spring was in order. A simple dressing, vegetables, and fresh mint and other herbs make this potato salad nboth simple and so very fresh and enjoyable. Let's celebrate Spring!
B I G N E W S ! ! ! Ok, so I don't know if y'all remember me telling you about a Working Holiday I was hoping to take advantage of? Well, I have officially set the gears in motion!
I have booked a flight from Canada to Dublin, Ireland for October 9th, 2017. I will be spending two whole years in Ireland and I couldn't be more nervous / excited. When I confirmed the purchase of the flight, everything became a reality. I am really going to be spending two years in a new country with no friends or family, it's so overwhelming to think about while also being a bit invigorating. All I know is that this is definitely the first time I've done anything like this so I can't wait to have the experience. This will also take my blog into a new and exciting direction. Not only will I continue to share recipes (although they may become more spaced out), I will also have the opportunity to blog about my experiences as they come. I'll be blogging about transitioning to a new country, adapting to a new way of life. my personal experiences, and culture. I am so excited to immerse and learn about the history, food, and people of Ireland. As always, lots of beautiful pictures (and selfies) to come once I arrive on the Emerald Isle. I can't wait to share this experience with you all as I believe it's going to be the time of my life! HAPPY VEG
