TOFU SCRAMBLE BREAKFAST TACOS WITH CRISPY POTATOES & PICO

I was inspired to create this recipe after we introduced our brunch menu at work. The idea of having tacos for breakfast really got me going so I had to write a recipe ASAP.
Pillowy tofu scramble, oven roasted crispy potatoes, and a fresh pico, wrapped up in flour tortillas and finished with a gratuitous dollop of hot sauce because really, what's a taco without hot sauce?

WHITE BEAN RAGU

I love the simplicity of this recipe and how delicious and filling it ends up being. White beans, onions, and medley tomatoes, sauteed with tomato paste, vegetable stock, and balsamic vinegar until cooked down, rich, and robustly flavoured. Served with a piece of grilled garlic toast for dipping, this recipe is a cinch to whip up through the week when things get hectic!

Veggieful Shepherd's Pie

Shepherd's Pie was one of my favourite dishes my mother would make for us growing up. Although it was such a simple dish, there was something so comforting about it when we'd all sit down at the table together. I truly enjoyed my mother's shepherd's pie and still think about it to this day.

I've whipped up a very veggie forward version of my mother's classic Shepherd's pie recipe. It's full of delicious veggies including leeks, cremini mushrooms, green beans, and broccoli, all cooked down to form a delicious vegetable layer for my shepherd's pie.
Finished with a layer of glorious mashed potatoes and baked until bubbly and lightly browned on top, there's so much to love about this dish. Every bite took me back to my childhood and filled my stomach with happy memories and utter satisfaction. Head to the RECIPES page for my take on a classic!

Green Coconut Curry with Peas, Potatoes, and Spinach

I've really been trying lately to expand my cuisine knowledge by testing new recipes and trying new things in the kitchen. Curry is one of my favourite dishes, but there are so many different curries and flavours out there that it's impossible to know which kind is my favourite. I guess I'll have to try every kind of curry out there until I find the one that is just right for me. :)

Today's recipe is extra special because I finally got my hands on Thai Green Curry paste that had no fish sauce in it. After reading the ingredients, I realized it was quite simple to make myself but I hadn't actually tried it before so I wouldn't know where to start with the ratios of ingredients. 
Anyhow, I present to you my Thai Green Coconut curry served over brown rice. This dish is entirely vegan, full of robust and delicious flavours, and quite easy to whip up. I love how creamy and delicious the coconut sauce was, you can really pick up on those curry flavours which is exactly what I was hoping for. Feel free to play around with the veg involved as well! Carrots, zucchini, chickpeas, cauli, any of these ingredients would fit right in with this dish.

GREEN COCONUT CURRY with PEAS, POTATOES, and SPINACH

I was so happy to find Thai Green Curry Paste without fish sauce for the first time. I've been searching for ages so finding it was pretty exciting.
For this recipe, I've got a vegan and delicious coconut thai green curry that is so flavourful and delicious. Coconut milk is added to a saute of veggies including potatoes, peppers, and onions, along with thai green curry paste and other seasonings to create a rich, fresh, and bold curry. It's totally delicious served over a bed of brown rice or whatever grain you prefer!

VEGGIEFUL SHEPHERD'S PIE

Shepherd's Pie was one my favourite dishes growing up. This is not surprising when you consider the top layer of glorious potatoes and my obvious addiction to potatoes.
I've created a vegetarian version before but this one really packs in the vegetables. The base layer has a wonderful collection of ingredients including leeks, green beans, lentils, and chickpeas seasoned with the perfect combination of herbs and spices. Finished with a delicious of mashed potatoes and baked until lightly browned and beautiful, this dish screams comfort and I can't wait for you guys to try it!

Butter Chickpeas & Potatoes

There are so many dishes I wish I would've tried before giving up meat and butter chicken was one of them. The sauce always looks so lush and rich, truly igniting my hunger. I knew I had to try and make it vegetarian and that's where this delicious recipe comes in.

As the name suggests, butter plays a crucial role in getting that sauce extra rich and delicious. Along with butter, the sauce is amped up with crushed tomatoes, whipping cream, and a plethora of fragrant spices including toasted cardamom and coriander seeds, nutmeg, ginger, and cumin. 

What you end up with is perfectly tender potatoes and chickpeas, draped in a lusciously creamy and flavourful sauce. Perfect for serving over a bed of brown rice or any grain you prefer. It's delicious and you guys are going to enjoy this one! Head to the RECIPES page!

Lemony Roasted Potato Slices

I'm always trying to find a new way to enjoy potatoes because I definitely enjoy them as often as possible. Being that they can do just about anything in the kitchen, it isn't hard to figure out some new way to season / cook them.

I am a sucker for roasted potatoes, I just love a good crunch on the outside. These potatoes are nice because they get nice and crispy on the exposed portions but the areas underneath one another stay tender and delicious. It's a wonderful textural contrast. 

I've seasoned them lightly and added some fresh thyme, lemon wedges, pepper flakes, and crushed garlic cloves to the sheet pan for some extra flavour. Finished with a final squeeze of lemon and sprinkling of sea salt, the potatoes are delicious and the perfect side to whatever main you want to pair them with!

LEMONY ROASTED POTATOES

Roasted potatoes make a delicious side to most mains, and a perfectly roasted potato is such a beautiful thing. Potatoes don't need much to be delicious and in this case, less is more. Sliced potatoes seasoned and roasted with garlic, thyme, and lemon, for a refreshingly flavourful roasted tater.

BUTTER CHICKPEAS & POTATOES

There were so many dishes that I regret not having tried before I gave up meat, and butter chicken was one of them. Fear not, I've whipped up a delicious vegetarian adaption of that wonderful recipe and I must admit, it's pretty delicious. Chickpeas and mini potatoes swimming in a flavourful, buttery tomato sauce that gives meaning to the word, "rich". Finished with some fresh greenery and lime, this is one dish I think you guys will love!

Who doesn't love a good taco? Tacos are such a fun dish to make because you really get to stuff them with whatever goodies you like, they're quite an interactive dish. 

Today's taco recipe is extra fun because my tacos are stuffed with spiced and fried potatoes. What could be better than that? Along with my spiced taters, there's refried beans, a super fresh and delicious pico de gallo, and a tangy cabbage slaw to help cool down the spices and richness of the beans and potatoes. 

What you end up with is a perfectly balanced taco. Robustly flavoured and rich, cooled down with fresh pico and slaw, and finished with a variety of toppings that you love.

Cauliflower, Potato, and Cheddar Soup

There's nothing like a rich, creamy bowl of soup to really warm you up from the inside out. Each velvety smooth bite  seems to taste better than the last as you make your way to the bottom of the bowl, it's just so enjoyable.

Today's recipe is quite simple and still really quite delicious. Potatoes, cauliflower, and cheddar, blended together until smooth and creamy, finished with a sprinkling of pepper flakes, hemp hearts, and / or cheddar cheese, what's not to love?

SPICED POTATO TACOS with PICO & CABBAGE SLAW

It's a well known fact that potatoes are pretty f**king amazing! I dream about them night and day in all of their wonderful varieties. This love for potatoes brought me to a crossroad which begged the question, would potato tacos be as legit as they sounded?
The answer to that question is yes! Spiced and fried potatoes along with refried beans, fresh and easy to prepare pico de gallo, and a refreshing cabbage slaw, all stuffed inside your choice of crispy or soft tacos. With a plethora of optional toppings, there's just so much to love. Everything about this recipe is a resounding yaaaasssss from me and I think you guys will agree!

CREAMY POTATO, CAULIFLOWER, & CHEDDAR SOUP

After testing and posting my Broccoli Cheddar Soup, I knew I was going to make something similar with cauliflower. The two veggies are from the same cruciferous family afterall, and are often eaten in the same manner. 
Potatoes and cauliflower both can be used to thicken a sauce / soup so there is no roux needed for this recipe. Potatoes, cauliflower, and cheddar, are blended into a creamy and wonderful soup that is balanced, flavourful, and deliciously rich.
