I've always had an affinity for potatoes going all the way back to my youth. Tater tots were my favourite of all the bagged, frozen potato products. They had it all, crispy outside, fluffy inside, density, texture, I mean, they're perfect. Their only downfall would be that they weren't necessarily the healthiest side dish which is where this cauliflower version comes in!

Cauliflower and white cheddar come together for a flavourful and surprisingly reminiscent tot alternative that gives you all the feels of the tater tots of long ago with the addition of cauliflower so you can still say you're eating your veggies despite getting to snack on these delightful tots. It's Taco Tuesday today so we are all on board with gorging on tacos because that's what we do on Tuesday's. Taco Tuesday just so happens to be my favourite day of the week second only to Friday when I have the weekend off. Tacos are just one of those glorious foods that ignite hunger and happiness in us and help promote world peace. Ok, so maybe that's a stretch, but they definitely make a bad day great when dinner time rolls around.

Yesterday, I shared a recipe with you guys for buffalo cauliflower bites that I hope you enjoyed because today's taco inspiration comes from those fiery little bites of deliciousness we enjoyed together yesterday. Buffalo cauliflower, crispy, delicious coleslaw, cool avocado and crispy tortilla strips come together in every bite for a taco that gives you a little bit naughty and a little bit nice but a whole lot of delicious.
