Vitamix Blenders - The only Blender

Ok y'all, I have a contest that I've entered recently and although you never want to bank on winning a contest, I'm still holding out. HOWEVER, if / when the time comes that I lose said contest, this is the exact Vitamix blender I'll be getting from Amazon.

NO COMPARISON

I've had a Ninja Professional for about 4 years and you know what, it's done the job. I also happen to work in a Vegan restaurant where I'm always using the Vitamix Blender and I have to tell you, it's worth every penny and there is no comparison in terms of functionality. I love a smoothie, but hate when the seeds I use like flax or chia, don't fully blend up. Fruits like raspberries or blackberries that leave undesirable seeds in your not so smooth-ie. Not cute.

The Vitamix Blender gets it right and gets it smooth. There's no comparison. I'm so excited to FINALLY get mine from Amazon and you should too! No more lumpy smoothies!

Chilaquiles Verdes Casserole

Chilaquiles is typically a skillet of tortilla chips that are coated in enchilada sauce and topped with cheese and eggs before being baked. I decided to give it a little twist with this fun little layered casserole version.

I sautéed up some veg, beans, and corn, and layered it between quartered tortillas along with some melty cheese and green enchilada sauce. This beauty baked up in no time, and I served it up with some super quick, crispy tortillas and fried eggs to give it that whole meal brunch vibe.

Mushroom Risotto

A few weeks back, I wanted to make a risotto and discovered I had no arborio rice. I ended up making an orzo risotto that was super tasty but I knew I had to come back to this idea because risotto is something I'd never actually made from scratch before.

Here we are, a few weeks later and I've got a delicious mushroom risotto for y'all. It turned out perfectly in my opinion. Notes of thyme and finished with a hefty serving of grated pecorino to bring everything together, it's such a wonderful dish. Enjoy it as a side or make it a main by frying up some plant-based protein / tofu to finish the dish.

Hot Pepper Mac And Cheese

This recipe was inevitable in my opinion. I am a sucker for spice and mac and cheese is like, my favourite thing to eat, so combining the two was a match made in heaven for me.

We've got spice coming at you from every direction in this mac. Diced jalapenos, pepper flakes, cayenne pepper, and cheeses infused with habanero & jalapeno. The combination of spice and rich, cheesy goodness are a perfect pairing in my mind.

Chunky Cabbage Soup - Freezer Batch

Cabbage soup is so nostalgic for me. It's definitely in my top 5 in terms of soups. It was a recipe my mom made sparingly and when she did, there was always enough to freeze for future meals. That's why I decided to whip up a cabbage soup of my own with those very same intentions. Having that container of soup in the freezer is a guarantee that you've got a delicious meal at your disposal on one of those weeknights where cooking is the last thing you want to do.
