Sundried Tomato Pesto Orecchiette

Remember that gorgeous sundried tomato pesto recipe I shared with you guys last week? It's really all you need to make a quick, fresh, and delicious pasta dish in absolutely no time at all. 

After making the pesto, it's as simple as sautéing some aromatics, simmering off some wine, and cooking some orecchiette perfectly. Then, toss the noods with that gorgeous pesto and some pasta water and finish with lemon and grana padano.

Easy peasy eats and so flavourful. As I said, having a batch of pesto on hand at all times is honestly, a huge recommendation from me. It makes for quick eats and you just can't beat fresh!

Artichoke & Sundried Tom Spaghetti

Simple pasta dishes like this one are like, the perfect thing for weeknights that are often busy and exhausting. This delightful pasta dish comes together in under 40 minutes from start to finish and really couldn't be easier.

This dish relies heavily on the flavours from the sundried tomatoes, nutty grana padano, and zippy lemon. Perfectly cooked spaghetti tossed in a simple pan sauce full of artichokes, tomatoes, and heat from pepperoncini.

Sundried Tomato Pesto

I just adore fresh pesto in all of its varied preparations. While I'm prone to a creamier, blended pesto, I also love a more traditional, chunkier pesto made in the food processor. As long as I'm getting that nutty, cheesy flavour and loads of fresh, gorgeous herbaceousness, we're good to go. 

Working off my traditional pesto recipe, I upped the cheese, added an additional clove of garlic, some pepperoncini in oil, and sundried tomatoes. The resulting pesto was so full of flavour and so delicious. Get on over to the RECIPES page for this fresh and fabulous pesto recipe!

Cheesy Baked Cauli

A great side dish to a meal can sometimes be the best part if you ask me. Such is the case with this Creamy, cheesy baked cauliflower. Bubbly, creamy, golden brown deliciousness and it really couldn't be easier.

I left the florets rather large for this bake and they get so unbelievably tender in the oven. It's important to blanch the cauli to make sure it cooks properly but also ensures it doesn't let out too much water in to your creamy bake.

I made a quick, cheesy bechamel and poured it over top. Finished with more cheddar, a quick panko crumb, and some sliced jals, and baked to bubbly, golden perfection. So creamy, so luscious, and available now under the RECIPES tab.

Pesto Risotto with Burrata & Roasted Toms

There's absolutely nothing wrong with this dreamy risotto you guys. Risotto is definitely one of my fave things to eat and it's so easy to play around with the flavours with every risotto you make.

Pesto season is upon us, that's not really a thing, but for me, the warmer weather begs for pesto at all times. I could eat pesto every day and it's super simple to make at home. Anyhow, I made a standard risotto and folded in a batch of bright, fresh, and herbaceous pesto to finish. I topped the risotto with some gorgeous roasted grape tomatoes, a dreamy hunk of burrata, and a drizzle of sweet balsamic reduction.

scotch Eggs

These were so fun to make you guys! Definitely something I've been meaning to try for a very long time and I'm so glad I did. Pretty much from the moment I tried the Beyond Meat Hot Italian sausages, I knew this dish was on my radar.

It's really simple to make them. Obviously, I would have preferred a soft boiled egg but for a first attempt, at least they're not overcooked lmao Quite simply, you boil & cool your eggs, roll out a sausage and form it around the egg. Dip in flour, egg, and crumbs, and fry until golden and gorgeous.

They're savoury, they're crispy, and they're super satisfying. A lot of the recipes I peeped suggested something pickled so I'd recommend pickled onions. Anyways, so yummy you guys, you have to try them!

Whipped Feta with Cheesy Roasted Brussels

Literally, just give me all the whipped cheeses. Ugh, whipped feta is so salty and savoury, it's absolutely divine and paired with these cheesy roasted brussels? Yes please!

I whipped the feta in a food processor with some lemon juice and enough EVOO to emulsify in to a creamy dip. The brussels were nestled in to a melted butter / pecorino mix and baked under a layer of mozzarella until tender and fab. The cheese gets brown and has a nice crisp which is lovely against the dreamy cheese.

Finished with chili oil for heat and lemon zest, both of which cut through the saltiness and create a tantalizing experience for the taste buds. Don't wait! Head on over to the RECIPES page!

Roasted Tater Tacos with Corn Salsa

Happy Taco Tuesday you guys! I've got a delicious taco recipe for you guys that's super easy, super quick, and also happens to be vegan! 

Y'all know I'm fond of putting potatoes in everything and tacos are no exception. I seasoned and roasted some russet potatoes until lightly crisped but nice and fluffy inside. Then, a quick corn salsa featuring fresh sweet corn, some onion, lime, and fresh cilantro.

Assembly was as simple as smearing some refried beans on some warmed corn tortillas, piling on some taters, and spooning some corn salsa over top. Finished with fresh cilantro, serrano sauce, and some sliced jalapenos for a kick. Get on over to the RECIPES page.

Jalapeno Cheddar Cheetos Street Corn

Ok, sometimes I crave hearty, nutritious bean skillets; full of nutrients and that feel good feeling. Other times, I crave gorgeous, fresh sweet corn rolled in Cheetos. It's called balance ok?

I'm obsessed with street corn. I've had a million cobs in my life time. Anywhere I am, if they have them, I'm ordering! I've also made a couple versions that I posted on the blog last year. With that being said, this version is for sure the funnest and tastiest yet!

​Roasted cobs slathered in mayo and rolled in crushed Jalapeno Cheddar Cheetos. Finished with sour cream, cilantro, Tajin, Grana Padano, red uns, and sliced jals. So fun, so yum. Head to the RECIPES page.

Savoury White Bean Skillet

I was on a little week staycation a couple weeks ago and decided I was going to try and skip grocery shopping in favour of using things I already had on hand. This recipe starts with a humble can of salt-free white beans, however, any can of beans would do the trick, and then incorporates simple ingredients we all likely have on hand.

Some sautéing of some aromatics including rosemary & thyme, garlic, and onion, a squeeze of lemon, our humble can of beans, and some broth, simmered together with a few flavour add ins and that's it. You get this rich and creamy bean skillet that's so delicious in its simplicity.

I served it up with some crusty grilled sourdough that I rubbed down with raw garlic for a burst of garlicky flavour. 
What I love about this recipe is that it's economical, quick and easy, and nice and hearty. It ticks all the boxes, doesn't cost much, and won't take hours to finish. What's better than that?
