PARSLEY & MINT POTATO SALAD


A little bit of a change from a traditional creamy potato salad but equally as delicious. Mini medley potatoes are gorgeous and make for a colourful salad. Fresh parsley and mint really pop against the vinaigrette making every bite fresh and flavourful. This salad is definitely one you'll want to make again and again!



SLOW COOKER SPLIT PEA SOUP


This soup is simple in its ingredients and preparation while also being simply delicious. Split peas are cooked to tender perfection in this soup along with a familiar collection of soup veggies. Also, remember that breaking out the slow cooker on a hot day saves you from heating up the oven and for me, that's important!

CAULIFLOWER FAJITOS


My delicious combination of a burrito and fajita. Stuffed with spiced chickpeas and a saute of seasoned peppers, onions, and tender cauliflower. The fajitos are wrapped up in flavoured tortillas and finished on the grill for a lovely crisp on the outside. These are so delicious I'd go so far as to guarantee they're addictive!

I love Mexican Food. I would give up an organ for a plate of enchiladas and that's not a lie. Mexican food is full of so many robust flavours, fresh salsas, and delicious cheeses that I can't find anything I don't enjoy about it.

My Tostadas recipe is so simple and absolutely delicious. Refried beans with tomatoes, onions, and scallions smeared across crispy Tostadas with an assortment of fresh toppings. What's not to love?

Simple Cilantro Pico

Pico De Gallo is simply a fresh salsa generally made up of a combination of tomato, onion, jalapeno, cilantro, and acidity usually from lime juice. This Pico is actually a simplified version of that with only a few, fresh ingredients.

This Pico is delicious on its own or as a fresh garnish. It's the perfect garnish for this week's Stacked Bean & Cheese Tostadas recipe because it's so fresh it cuts through the richness of the beans and cheese.

CILANTRO PICO


I love Pico salsa. It's super fresh, colourful, and delicious. It's very easy to whip up and makes a great condiment to a mexican themed meal. This version is even simpler than traditional pico because it only has 4 ingredients!

STACKED BEAN AND CHEESE TOSTADAS


Tostadas are so much fun to make and I just love how crispy and chip like they are. I've whipped up some quick re fried beans to smear on the tostadas along with melty cheese and all the toppings we love. Get a batch of the CILANTRO PICO ready for this dish!




TROPIKALE SMOOTHIES


It's hard to get enough kale especially if you're not entirely fond of its flavour. Here's an easy way! Blend it up with fruit and an almond / coconut blend for a delicious & nutritious smoothie!

Chili Style Soup

I absolutely love chili and I absolutely love soup so combining the two was only natural to me. When it comes to chili, every bite warms you up from the inside out and same goes for this rich, delicious soup.

The only difference between a soup and a chili in this case is the ratio of broth to ingredients. Most soups contain more broth whereas a chili is a tad heartier. This soup still gives you everything you love about chili but offers more delicious, rich, flavourful broth to go along with it.

Spinach & Artichoke Hummus

Hummus is one of those recipes that you can play around with at home and the results are usually delicious. Chickpeas are neutral in flavour so they can be paired with so many flavour combinations.

In this case I've folded in some fresh spinach and chopped artichokes. The artichokes give a hint of tang and texture that is quite delicious.

FRUSTRATED!

I am getting to the point of being frustrated with the lackluster responses I've received from the higher ups in Canada. I've so far emailed the prime ministers office, the supreme court, the attorney general, and CBC news, all in hopes of discussing our ancient animal rights laws most specifically, our laws regarding bestiality.

I am getting no where with these people and becoming more frustrated as the days go on. As a tax paying citizen I believe I have the right to have my emails answered, I have the right to some kind of acknowledgement. I am afraid the next step is going to involve becoming extremely annoying and persistent until I am responded to.

I assure you all I intend to be the reason our bestiality laws are updated. By hook or crook I will see to it that Canada acknowledges the embarrassment of our bestiality laws and updates them to reflect appropriate terminology and punishment. It may take me a minute but I'm determined!

Summery Chickpea Salad

Chickpeas are loaded with protein and fiber therefore the more the merrier when it comes to our diets.

This salad is the perfect way to enjoy a big old serving of chickpeas. Some delicious summer vegetables, a simple and tasty vinaigrette, and 10 minutes time for a fresh and delicious summer salad.
