Good to be Green Pasta

Going green is easy when a plate of pasta like this one is presented to you! This whole dish actually came to me after I was lucky enough to find Tripolina pasta at the Unico store a few weeks back. Tripolina pasta are basically long, thin versions of lasagne noodles that are  hearty and delicious.

Along with perfectly cooked Tripolina pasta, this bowl of green goodness includes fresh green veggies like zucchini and snow peas. I took advantage of some frozen veggies I had on hand as well including sweet peas and lima beans for extra texture and flavour. Everything is dressed in a light and delicious pesto sauce and served with a squeeze of lemon that really finishes the dish off perfectly.

Stuffed Mini Potatoes

Happy Monday everyone! With the start of a new week comes a new recipe for me to share with you all. My love for potatoes is once again brought into the spotlight with my first recipe of the week. I always have potatoes on hand in one form or another and I can usually think of a million ways to cook and serve them. Potatoes with a side of potatoes? Yes please!
I've got a super fun and delicious appetizer for you guys today. Stuffing potatoes is actually a hobby of mine, I try to make some kind of stuffed potato at least once a week. They're my favourite thing to make and quite possibly my favourite thing to eat as well. 

I've taken beautiful mini yellow fleshed potatoes and stuffed them with a robust and flavourful cheesy filling. The filling is quite simple as well, it's a blend of mozzarella, parmesan cheese, and pesto along with some seasonings to spruce everything up. It bakes into a gloriously cheesy snack that satisfies hungry bellies, trust me!

I took the time to quickly toast a combination of parmesan cheese and italian bread crumbs for a crispy, salty topping that takes these wonderfully cheesy spuds to the next level.

GOOD TO BE GREEN PASTA

This pasta dish celebrates being green. Green vegetables offer a variety of nutritional benefits and free radical fighting antioxidants so a dish like this makes it super easy to eat your greens. Along with the most gorgeous pasta I found while visiting the market, this dish includes fresh and delicious zucchini, snow peas, summer peas, and lima beans along with a light pesto sauce that is absolutely delicious. Being green is easy with a dish like this!

​MOZZARELLA, PARMESAN, & PESTO STUFF
ED MINI POTATOES

If I had one specialty, it would be stuffing potatoes. Potatoes are the perfect vessels for being stuffed with an assortment of delicious fillings. This time around,. I used mini yellow potatoes for a bite sized appetizer that will keep you coming back for more. Stuffed with a mixture of melty mozzarella, grated parmesan, pesto, and other herbs and seasonings, the potatoes are baked to perfection and finished with a toasted bread crumb and parmesan topping. The crispy topping provides a pop of flavour as well as adding some lovely texture and crunch to every bite. These little babies are so delicious, you will have to fight yourself not to eat the entire tray!

Roasted Asparagus with Lemon & Parmesan

Perfectly roasted asparagus is a sight to behold. Bright and vibrant, tender with a lovely crisp, and so utterly delicious. There are few vegetables I enjoy roasted more than asparagus. 

I've seen millions of recipes for asparagus online that call for cook times that are way too long. Asparagus cooks very quickly and goes from perfectly cooked to a pile of mush in a split second, so the cook time is very important. Eating overcooked asparagus can turn you off of it completely, it's pretty awful!

My recipe for roasted asparagus has been tested to ensure your asparagus comes out crispy and perfectly cooked every time. This particular version is quite simple with a few squeezes of lemon and grated parmesan that browns up beautifully in the oven. The combination of lemon and parmesan is like magic in your mouth, absolutely delicious!

Arkansas and the Ag-Gag bill

It's hard to start the day with such disturbing news but here it is. Arkansas is very close to passing the ag-gag bill which would be a direct attack on the rights of people who expose abuse in these industries. The bill allows the owners / operators of these industries to charge whistleblowers who expose indecencies in their industry. Basically, all of the hard work undercover activists do to expose animal cruelty will be under attack. 

It's most alarming that any state would want to stop the exposure of shady activities. Why in the world would you want to penalize someone for standing up to something that is so obviously wrong? This ruling doesn't apply only to the animal industry either, nursing homes, hospitals, and schools will also fall within this ruling. Anyone who attempts to expose activities that reflect badly on the company will risk being persecuted by the company itself. 

This ruling is going to deter people from speaking out against injustices for fear of being persecuted. These "whistleblowers" are the reason that so much undercover abuse has been exposed and without them, indecencies in these industries will go unrecognized. Sadly, this is the will of the government in Arkansas.

Does this not imply that this must happen often? The solution to dealing with all of the problems is to gag the people who are exposing it? That's hardly a solution! How about thanking them for exposing problems that would otherwise go unnoticed? What a disgusting idea to think that people who fight for what's right within their industries would have to fear persecution for speaking out. Why not attack the problem versus attacking those who expose it?

I am really hoping this bill doesn't make it all the way. It's a scary thought to say the least.

Blueberry Overnight Oats

Overnight oats are my new favourite thing! 5 minutes of your time before bed and you wake up to a healthy, delicious breakfast. What could be easier than that?

Overnight oats are as simple as whisking everything together and refrigerating overnight. You can top your overnight oats with any collection of toppings of your choice making it quite easy to enjoy the oats over and over again!

I like transferring my oats to mason jars making it easy to store them and easy to snatch a jar out for breakfast on the go!

 ROASTED ASPARAGUS with LEMON AND PARMESAN

Perfectly cooked asparagus is a thing of beauty. Bright and fresh, crispy yet tender, and absolutely divine! I've got a super simple and flavourful roasted asparagus recipe that will make you fall in love with asparagus all over again. Beautiful green spears sprinkled with grated parmesan, pepper flakes, and a few squeezes of lemon for a seriously divine vegetable side you're going to absolutely love.

BLUEBERRY CHIA OVERNIGHT OATS

Breakfast is always touchy for me, I never feel like I have enough time to enjoy a delicious meal so I usually grab a piece of fruit and bolt out of the house. That's where this wonderful overnight oats recipe comes in! Overnight oats are so simple to whip up, delicious, and healthy to boot. Topped with your favourite healthy toppings including nuts, fresh fruit, and granola, overnight oats are a wonderful way to start the day and take no time at all to prepare. Breakfast is saved!

Slowcooker Potato & Broccoli Soup

Blended soups are probably my favourite variety of soup. I love that all of the flavours really come together and the soup becomes so abundantly flavourful and creamy. It's such a treat to enjoy a bowl and you can blend together so many varieties of soup as well. The possibilities are quite endless.

I've got a creamy potato and broccoli soup that really made my stomach smile. I decided this time to reserve 1/4 of the soup prior to blending so that there would be a few pieces of broccoli and potato floating around. Sort of reinforcing what you're enjoying in this blended soup. It's such a cinch to toss everything in the slowcooker and wait patiently for a beautiful soup to finish. 

Enjoy the soup with a hearty roll or croissant for dipping and finish with a drizzle of whipping cream and pepper flakes for a little welcome heat. ENJOY!

Warm Avocado - Yay or Nay?

​Avocados are almost always enjoyed at room temperature or cold. Rarely do we think to heat them up for fear of how they will end up. Is there any reason for us to be uneased or should we be trying them warm in the kitchen?

​Well, VEGNEWS has some ideas for ways to enjoy them warm and I figured I'd share along with some of the ways I've used them in the past.

I've enjoyed avocados warm in a few dishes in the past and they end up becoming a warm, rich, creamy bite of food. They are just as delicious as they are in something like a guacamole or as a spread on a sandwich. 
  1. As a LAYER in a Mexican style DIP. A layered dip is a fabulous way to enjoy avocados warm. Layers of refried beans, melty cheese, and avo / prepared guacamole make for a creamy, rich, and delicious dip that is so hard to stop eating!
  2. Along the same lines was my Tortsagne. Inspired by a traditional pasta lasagne, I took a Mexican approach and layered beans, cheese, guacamole, and tortillas in a baking dish. A little bake up in the oven and you've got a layered dish that is so utterly satisfying.   3. Some of their suggestions include off the grill, fried, or in baked goods like cakes and cookies. Speaking from experience, they work beautifully in chocolatey desserts. Cakes and cupcakes turn out fabulously with avocado included. 

Finding perfect avocados can be like finding a needle in a haystack but I intend to find the perfect avocados to test out some of vegnews suggested ideas. I'm most looking forward to breading and frying them. I am picturing a crispy and delicious golden brown coating with a smooth, luxuriously creamy center that I know I'd enjoy!

Vegetable Tortellini Soup

​There are few things as comforting and delicious as a bowl of soup. From the fresh ingredients right down to the perfectly seasoned broth, soup is where it's at!

This bowl of vegetable soup includes fresh vegetables like bell pepper and broccoli along with tender tortellini noodles. Fresh pasta is the perfect addition to a bowl of vegetable soup and provides a wonderful texture contrast to the fresh vegetables.

The tortellini is added right at the very end to keep it perfectly cooked and avoid it overcooking and losing all texture.
